REMINDER: IMPORTANT!  We will continue to print this message in every newsletter from now on. It is an important issue that we believe needs to always be addressed:
On occasion, a subscriber will ask our doctors a question regarding a food intolerance and their responses will slightly differ. This has sometimes caused confusion and has been expressed directly to one of our doctors by several patients.

Per Dr. Zeff: “…most likely, we are not evaluating foods for, e.g., potato content. We are evaluating a food against a blood sample of a person with a known potato intolerance…” Test results for one patient to a food can vary from another patient, even though they are intolerant to the same food category. So, Dr. Watrous may determine a different result than Dr. Zeff, or any of the other doctors who competently perform this testing, because they are testing a patient’s specific blood sample to a specific food sample. As Dr. Zeff puts it, “It is one of the peculiarities of the methodology.

For this reason, we constantly emphasize throughout the Song of Health website that the information found on the website is a guide only. If you have any personal issues with a product, in other words, a test evaluation shows a food should be o.k. for you to eat, yet you have a reaction to it anyway, we suggest you refrain from consuming it until you have it tested for you personally.

Always, always, always consult your physician with any medical issues you may be experiencing, any drugs you have questions about or your medical care. Our purpose is to help you to determine what foods are included in food intolerance categories. All other information, including articles, are for educational purposes, and is not meant to replace your doctor’s care for you. We are set up as a support team for doctor, patient and subscriber. Hello Sandra.  My husband just made a casserole dish and we couldn’t remember the substitute for potato. Are parsnips & turnips related to the potato? I remembered, from reading your page before, that you have a potato intolerance as well. So, I figured you’d be the best person to ask since you’ve been doing this longer than I have. I’d appreciate any advice you can give me to avoid my intolerance. My primary intolerance is potato and secondary is fruit/sugar.

I am also very sensitive to natural flavors and I’ve read the article on your page titled “What Exactly is a Natural Flavor?” I plan on reading Fast Food Nation to gain more insight on this. I was wondering if you knew if certain foods are more likely to have potato in it. For example, any tea that lists natural flavors on their label usually causes me discomfort. Do you know if most tea companies use potato when making the natural flavor or am I just sensitive to natural flavor in general? I realize you’re not a doctor but I’d just like some advice from your experiences with natural flavor. Again, thank you so much! I appreciate any advice you could give me.  Beth

Hello Beth.  Parsnips, turnips, and  rutabaga are all safe roots for potato intolerant people. My favorite substitute is yucca root, however, depending on where you live and the time of year, it is not always available. It is often found at Fred Meyer, Safeway and other super stores. It is hard to believe how great it tastes and yet is safe! It is cactus root. Dr. Zeff has mentioned before that his family uses winter squash to substitute potato. May I ask, what is the casserole? Maybe I can help with suggestions...Depending on the dish, I have used rice too.

"Natural flavors", as Dr. Potenza describes, leaves the arena so wide open for potential ingredients that it is best to avoid products with this listed "ingredient" as much as possible. Often, they contain potato derivative, used in its sugar form to aid in taste, not to mention other who-knows-what-sugars. When you eat something that consistently causes you discomfort, it's a safe bet to stay away from it. Regarding teas, I suggest checking the Food Resource List under Teas. Many of the ones evaluated contain fruit and some contain potato, oftentimes coming from the tea bag as well as the "natural flavor."

From Madeleine: Hi Sandra (or whoever is reading this e-mail).  I joined Song of Health because I recently found I have a potato allergy and I cannot mix fruit with cane sugar.

I am looking for almond butter, tahini, curry powder, garlic powder and flax oil that are potato starch and sugar free.  Do you have any ideas for these 5 products?  Thank you so much, Madeleine

Reply from Sandra:
Regarding almond butter: There is a brand listed in The Food Resource List that is potato-free, does evaluate positive for fruit: Justin's Natural Nut Butter Honey Almond Squeeze Pack. Are you able to find a store that offers being able to fresh grind almonds and peanuts? Quite often, the natural food stores will have a grinding machine where you can grind your own. I have noticed that most of the products that test positive for potato have salt included, and salt will often have potato starch in it to keep it from coagulating, and possibly for taste. Apparently, there's not enough to meet FDA standard requirements for labeling potato as an ingredient, but it definitely has an effect on us potato-intolerants. So, if you can find organic brands of tahini, almond butter, etc. without salt, you are probably safe from potato. If you have a product already, I suggest sending it in for our doctors to evaluate at Windrose Clinic. (Click on the icon "Send a Sample for Evaluation", found on the left side of the page at the Song of Health website.) Then you'll know for sure, if you can have it or not. Note: I would highly recommend refraining from eating sugar products (See Sugar in the Food Categories Lists) as much as possible. I realize that's difficult this time of year. You will feel a lot better if you don't, though!

Re flax oil: Barlean's is a great brand and is sugar and potato free, as well as being organic. (See the Food Resource List.)

Re garlic powder: I always use fresh garlic. If you need it for garlic bread or such, press it through a garlic press and it comes out so tasty. I never use garlic salt.  We do have a listing in the Food Resource List for minced garlic by Spice World that is potato free, but does have fruit.

Re curry powder: I'll look into finding some good recipes for making your own. Or, if you find a brand that is not already on the Food Resource List, once again I suggest having it evaluated by our doctors.

From Madeleine:  Hi Sandra, thanks for getting back to me.
I have just found a tahini brand that is safe!  The tahini is Arrowhead Mills and it is delicious.

I have tried testing almond butter from a store's fresh grinder, but they have all tested positive for potato starch. I think your point about salt is right on.  I am considering buying a grinder and making my own, but we'll see . . .

For curry powder, I have found the best way is to buy all the whole spices, grind, then mix my own blend.

As for sugar products, I haven't eaten one in six months (not even an apple), and the holidays don't change my resolve. Some things are more important than a sugar fix!  Thank you, Madeleine

We know it is our own selves who reap the benefits of doing so, yet many have difficulty doing so, or even understanding the importance of avoiding their personal intolerance foods. Madeleine:  Just to let you know, it took me one solid year of trying to stick to a restricted diet and ALWAYS falling off - then feeling guilty and sick, than starting all over again. Finally, after feeling sick for so long, I realized that my health was so much more important than any momentary pleasure from sugar. And now it is easy for me to sit at a dinner sipping ginger tea while everyone else around me is eating bread pudding with chocolate sauce. But that took awhile.  Thanks again, Madeleine

From Lisa:  I am wondering if we can request updates on certain foods that you have tested, but it has been a couple of years since you tested them. There was something from Bob's Red Mill (a flour) that I asked them specifically about potato content for, and they investigated and said no, but your report (from 2 years ago) says yes....  Thanks! Lisa

Hi Lisa, I can look back but I need to know exactly what flour you are referring to. Bob's Red Mill manufactures many kinds of flours. Also, it's not uncommon for them to change their processing methods, so one month the same food may result differently from another. What doctor analyzed the flour for you?   In Health, Sandra

Lisa:  Specifically, it is:  Bob's Red Mill Unbleached Organic (evaluated 7/07).

In speaking with the folks at Bob's, I was informed that all of their organic flour is un-enriched, including this one (which, if I read your website correctly, correlates with: http://www.bobsredmill.com/organic-unbleached-white-flour.html at the Bob's site). If you read the description there, it specifically states that it is un-enriched. And the folks at Bob's backed this up, stating that the flour did not have potato and was not enriched.

Bob's deals with folks with allergies/intolerances all the time, so I would think they would be pretty careful in making statements like this. So, I'm confused by contradictory information, and am wondering if something has changed in the past 2 1/2 years, and if you could test it to find out...Thanks! Lisa

Sandra: Dear Lisa, I am referring your question to Windrose Naturopathic Clinic to help further explain how it's possible that the company's representatives informs us of one thing and our doctors' evaluations prove something different. As you are aware, our records of 07/07 evaluated positive for potato. I am willing to bet that the representatives - generally an information front desk - are not aware of their entire flour making process. Just because it is not "enriched" doesn't mean that there isn't a contamination. It could be coming from the packaging which, I'm guessing, they do not test for adulterating ingredients. I trust our doctors evaluations over anyone else's, even the companies’. There are many people involved in a company and I seriously doubt if they all know everything about their product! Hopefully, our doctors will be able to shed more light on your question soon.

I want to congratulate you for taking the extended time to investigate products. This is something that would benefit all subscribers to do! It is sometimes frustrating, however, hoping you can get correct answers from them, only to find out they are contrary to evaluation results from our doctors. I had a similar issue once, with a brand of nutritional brewers yeast. They insisted their product was produced from molasses, yet it tested positive for something else. In Health, Sandra

I'm new to The Forum.  My doctor tested me and said I have a fruit intolerance and also shouldn't combine grain and sugar.  It seems everything has fruit in it and I can't find much I can eat.  Feel like I'm starving to death.  My stomach is so messed up it seems there is no way out.  Help!

Hello Prudence: We all can understand your frustration! It isn't easy to change our eating habits, but you will find this is well worth it.  I offer advice and counseling sessions, if you are interested.  You may email me and I can help you with more involved information than just a few sentences here.

Without knowing what you generally eat, I’ll give some general information here, and hopefully, our fruit intolerant subscribers will share how they eat.  The most important thing to do is become so familiar with the information on the Food Category List that you know it by heart.  Then refer to the Food Resource List for products that have been evaluated for fruit.  That will give you a good start what to avoid!

Now, for what you can eat:  Re fruit: Vegetables are safe.  Most meat and seafood are safe. You can have all melons, tomatoes, salad using rice or white vinegar (grain) and oil other than olive or grapeseed, such as safflower (neutral), sesame (grain) or sunflower (grain).

Re grain/sugar:  I highly recommend you refrain from refined sugar, which is awful for our health.  Use honey, maple syrup or agave syrup instead.  That will protect you from the grain/sugar issue.  Check the Food Resource List to make sure grain and flour products are free of fruit, often used as a preservative (citric acid).  

You are generally better off to refrain from boxed and canned food products.  Many of the canned foods, such as tomato products, contain citric acid (fruit).  It is time-consuming to make dishes from scratch, but much healthier.  Check the recipes section for some great ideas, and the food substitutions list for alternative ingredients you may use to substitute fruit, sugar, etc.

We recommend you contact your personal Naturopathic physician to help you with supplements, then be sure they have been evaluated.  Please see the Food Resource List, under the Vitamins and Supplements category to see the products that have been evaluated.

Would you consider making lists of all acceptable products for each intolerance?  It would be helpful to just look at a chart of what is good for fruit, dairy, potato, etc. intolerance.

Dear Prudence: That is exactly what the Food Categories Lists are!  If you need help in finding what information you need, please feel free to email me and I will be happy to walk you around the website.  I realize there is a lot of information available and it can be confusing at times, how to find it all.

To find your personal food intolerance list of what foods are in the category, click on "Food Categories" (found at the left of the pages), then click on the food intolerance category.  This is, I believe, what you are looking for.

Posted by Prudence:  Thanks Sandra.  I know about the lists you have now.  What I was suggesting was to make separate lists for each intolerance, i.e., fruit: Ryvita crackers, Organic Valley Whole Milk, etc. so you wouldn't have to sift through the list.

Posted by Sandra, CEO of Song of Health:   Thank you for your suggestion, Prudence.  They are always welcome.

We have created the current lists as such, because that is the easiest way to keep things current and to manage the information.  It also seemed to be the most convenient way to find the information.  So, if you want to know about a specific cracker, for instance, whether it has been evaluated and what the results are, it would seem easiest to find the info by looking it up by food product category.  I try to keep everything in alphabetical order, according to the name on the packaging.

It is a very difficult process to bring you all the information in an easy and methodical way. I realize it doesn't seem like it would be, but products are changing constantly and we are finding out new information about foods every day.  If we were to put specific products in the food categories, the next thing you know the ingredients would be changed and we would have to move it somewhere else!  I think this would be very confusing, trying to find something.

A FOOD CONSUMPTION JOURNAL

How many times have you felt downright lousy and wondered what you got into that made you feel anywhere from a small volcano erupting inside your innards to a Mack truck leaving tire tracks from head to toe?  It can be a real guessing game, the attempt to pin down the culprit cause.   We ask ourselves, “Was it something I ate yesterday, or the day before?  What did I eat yesterday?”  The next common thought rationalizes, “It wasn’t anything I ate.  It was a fluke – I caught some bug from somewhere.”  Second-guessing becomes a real stab in the dark when we don’t take notes.

Although we can obviously resolve to make changes at anytime in our lives, we often resolve to start a new trend in January.  This moment offers us a great opportunity to begin…a new journal - journalizing our eating habits and how we feel!  Journalizing is an effective – and easy – tool to incorporate in our daily lives.  We can enjoyably set goals to getting healthy, determining a correlation between what we eat and its effect on our well being. 

What???  You have no goal???  I submit we all support each other by setting a goal to creating better health for our families and ourselves!  We can set personal benchmarks, and then make notes of our progress.  If we find ourselves feeling discouraged in a day, we can look at our journal and realize we are making progress.  Immediately, our spirits are lifted!  If you are being treated for a health condition, share your journal with your Naturopathic physician.  Your doctor can work with you to focus on ways to change your diet.

Where do we start?
What do we write in a journal?
How do we organize it?

In order to help you begin to keep quality records, I am supplying a journal worksheet here for you, as a start.  (See pages 19 and 20 of this newsletter.)  For your convenience, we are also working on making an interactive journal available for you on line, which we plan to have available for you within a couple months.  You will be able to keep easy records by just going to your journal on line and jotting down quick notes.  This online journal will only be seen by you.  You will first login to Song of Health, then be able to click on the “journal icon.”  It will all be part of your personal account.

The journal being provided has 2 pages.  On the first page, column headings are: Date; Foods Consumed; Reactions/Symptoms; and Notes-Solutions-Benchmark.  The second page columns are: Date; Condition Being Treated For by Physician; Progress Report; and Correlation Between Healing Progress And Diet.

Our goal is to make journalizing fun, so you’ll be willing to do it.  Think of keeping a journal as something you look forward to doing, rather than another chore and time-consuming effort.  You will find it informative and beneficial and it will only take a minute per meal to write what you ate.  Then, at the end of the day, you can jot down how you felt.  Did you feel normal – no discomfort – or did you feel uncomfortable in any way?  Feel free to customize your journal to fit your personal needs.  Try journalizing each day, if possible, for a month.  At the end of the period you will have created a habit of journalizing.  You will be able to look back and see if you find symptomatic correlations when eating the same foods.

Note:  If you happen to miss a day here and there, don’t worry about it and DON’T GIVE UP!  Even if you only journalize when you experience uncomfortable symptoms, this will still help to notify you of foods that may be an issue for you.

Using a journal, we can look down columns to easily recognize information that we would otherwise have forgotten.  “I think I had fruit for lunch last Sunday, can’t remember for sure,” hardly aids us in making accurate determinations.

REPORTING ON PROGRESS OF WORKING WITH
NEW ZEALAND ESSENCES

In the November 2009 issue of Dragonfly News, I discussed how I agreed to be a guinea pig patient for my sister, who is learning how to administer the medicine of natural essences from New Zealand. The essences are meant to reach our condition on a number of levels, including old emotional and mental scars caused from traumatic experience and healing of the chakras (energy centers). 

Within a month of taking the drops, I began to notice subtle changes in my being.  I was waking up in the morning free from fear.  Prior to  taking the essences, I would often awaken with a clenching grip in my gut, addressing the most base fear of humans – survival.  My personal nightmare concerned financial condition and if I would be able to pay the bills down the road.  This is not realistic, as “down the road” hasn’t arrived yet.  It also addresses how strong (or not) my faith is, that I’m not going to be dropped on my head as long as I do the footwork required to take care of important requirements.

Another obvious change in me occurred.  While visiting my parents over the holidays, I found myself unbothered by dysfunctional behavior that used to really push my buttons, and which then resulted in turmoil, chaos and outright insanity caused by my reactive displays.  Instead, I easily stepped out of personal attachment to old emotions and became far more compassionate toward others.  Mind you, my personal inner work has included getting to this point for quite a while and, through the years, have made great progress.  Now, however, I felt like I was given a boost into the saddle, up and riding instead of being dragged by a boot caught in the stirrup. 

My sister is preparing to send me the next stage of essences, a further continuation of the ongoing process.  Because of the subtle changes I’ve already experienced, I’m excited to see what comes next.  It’s amazing how our minds can shove down fear and pain to very deep and unknowing crevasses in an effort to protect ourselves, not realizing our personal undermining and condemnation.  Unwanted memories are always fears creeping around the edges.  We must first understand the source of what we try to deny, then the healing begins.

CAKES

CARROT CAKE WITH HONEY AND PINEAPPLE

FOOD CATEGORY INGREDIENTS

3 eggs

1 cup oil (peanut oil is excellent)

H
1 cup honey
2 cups shredded carrots
F
1 cup or more crushed pineapple with juice
1 cup crushed walnuts
1 tsp. pure vanilla extract
G
3 cups (wheat) flour
1 tsp. baking soda
½ tsp. baking powder

Preheat oven to 325 degrees.
Beat eggs, oil, and honey.
Stir in carrots, pineapple, walnuts, and vanilla.
Sift dry ingredients. Stir into wet mixture just until evenly mixed.
Butter or oil 2 loaf pans.  Pour batter into the pans.
Bake for 45 minutes, or until a toothpick comes out clean when inserted.
Yields 2 loaves.
Variation: Grease and pour batter into a cake pan.  Bake as above, checking to keep from over baking.
HINT: Easily adapt a Carrot Cake recipe to meet your own needs by viewing the several recipes offered, getting a feel for the ratio of ingredients to each other, and then substitute or the ingredients for personal requirements.  Extend this trick to adapt other recipes.

 

CANDIES

TWO-SEED HONEY BALLS

This recipe was given to me by my mother. I don’t know where she got it from.
Note from Ma:  “This recipe requires a bit of doing...three bowls and stickiness.”

FOOD CATEGORY INGREDIENTS

2 cups hulled sunflower seeds

6 to 7 Tbsp. honey
F
3 Tbsp. raisins
1 heaping Tbsp. carob powder
G
3/8 cup unhulled sesame seeds

In a blender or grinder, grind the sunflower seeds into a flour. “Dump” them into a mixing bowl.
Drip in the honey and mix very well.
Add the raisins (whole) and mix until you have a sticky, cohesive mass.
Into a small bowl or saucer, measure carob powder.
Into another small bowl or saucer, measure the sesame seeds.
With a teaspoon and your clean hands, shape a lump of the honey-sunflower mixture into a ball about 1 inch across.
One at a time, roll half of the balls in the carob powder until covered.
Set them on a piece of wax paper.
One at a time, roll the remaining balls in the sesame seeds.  Set them directly onto a dish for serving.
After about 15 minutes, the honey should soak through the carob.  Now roll the “carob” balls in sesame seeds also and set them onto serving dish.

COOKIES

RAISIN-DATE BARS

8 oz. pitted dates, chopped

1-1/2 cups raisins
¾ cup water

¾ cup honey
½ cup chopped nuts
D
¾ cup butter, softened
1-1/4 cups unsifted flour
1 tsp. salt

1-1/4 cups quick oats (not cooked)

Preheat oven to 350 degrees.
In a saucepan combine the dates, raisins, water and ¼ cup of the honey.  Boil 5 minutes.
Cool slightly.
Stir in nuts, then set aside.
Cream the butter.
Add remainder of honey (1/2 cup) and beat until light and fluffy.
In a separate bowl, combine flour, salt, and oats.
Stir into creamed butter/honey mixture.  Mixture will be crumbly.
Lightly butter a 9” x 13” baking dish.
Evenly and firmly pack 2/3 of the crumbly mixture in bottom of baking dish.
Cover evenly with the date mixture.
Sprinkle the remaining crumbly mixture over the top and press down lightly.
Bake for 25-30 minutes.
Cool in pan on wire rack.  Cut into bars.
Yields 32 bars

       

CUSTARDS AND PUDDINGS

VIRGINIA APPLE PUDDING

1 cup butter or margarine

1 cup sifted flour
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon

½-3/4 cup honey, personal taste

1 cup milk

2 cups cooked or canned apple slices

Preheat oven to 375 degrees.
Melt butter in a 2 quart casserole dish.
To make batter:  Combine dry ingredients in a bowl.
Stir in honey and milk, mixing thoroughly but do not overbeat.
Pour into casserole dish.
If apples are canned, drain.  Pile the apple slices in the center of the batter.
Bake 30-40 minutes, until batter covers fruit and the crust browns.
Serves 4 to 6.

DIPS AND HOR DUERVES

BEAN DIP SUPREME

Tabasco Sauce or other hot sauce

1 ripe avocado

1 cup sour cream

1 Tbsp. lime juice or
vinegar
1 Tbsp. cilantro, or to taste

Remove seeds from chili and finely dice.
Peel garlic and mince.
Heat oil or butter in skillet to medium high. If using butter, clarify by removing fat solids, leaving just the butter oil.
chili, leek and garlic. Sauté for a minute.
Add beans and stir to mix well with other ingredients in skillet.  Cook until beans are bubbling, then remove from heat.
Stir in hot oil or sauce, then set aside.
Drain olives, rinse well to remove excess salt and drain again.  Slice olives.  Set aside.
Scoop avocado from skin, remove pit.  Cut most of it into chunks, leaving a little to make a few thin slices for garnish.
In a bowl and using a mixer, or in a blender, place avocado, sour cream, lime juice or vinegar, and cilantro.  Whip or blend until nearly smooth.
TO LAYER THE DIP:
In a glass 8 x 8 baking dish or similar serving dish, smooth half of the bean mixture evenly  on the bottom.
Next, smooth a layer of sour cream/avocado using half of the mixture.
Sprinkle half of the olives on top as the next layer.
Repeat, using remainder of ingredients.
Garnish with a few thin slices of avocado in the middle, facing the same direction; place sprigs of cilantro in several places, so the leaves are sitting upright.
Serve with tortilla chips (G).
Serves 4. 

 

PANCAKES AND WAFFLES

DUTCH BABY

There are many variations of this simple oven pancake.
Per person:

¼ cup flour

1 Tbsp. butter

Preheat oven to 400 degrees.
Place a small cast iron skillet in the oven while it preheats.
In a mixing bowl add egg. Beat egg with a fork until barely mixed.
Add flour and milk.  Stir until blended.
Remove preheated skillet from oven.
Melt butter in skillet, turning to coat sides as well as bottom.
Immediately pour batter into skillet. Return to oven.
Bake 20 minutes.  Pancake will rise along sides, making crispy edges.

* By listing the “Date Evaluated” you can be assured of the most recent updates.

* Under the “Evaluated For” column, “ALL” signifies that the product has been analyzed for all food categories included in the Carroll Food Intolerance Evaluation Method.
