CANDY AND GUM:  Bumble Bee Chocolate?  I did a search --- which one?  Do you have more details?

BREAD: Great Harvest Bread Co. Honey Whole Wheat Bread ---Windrose says it's Sugar, your site says something different and both tested 1/15.  Shellie

Reply from Sandra:  Bumble Bee Chocolate: When we first launched Song of Health and started publishing The Food Resource List, we were pooling the evaluation records of Windrose Clinic and Dr. Jared Zeff at Salmon Creek Clinic. I'm guessing these were from Dr. Zeff, as he didn't necessarily keep records of what he tested for, just what the results were. Needless to say, in those days they weren't as aware of the need to be more specific as we are today with evaluations; and they were generally analyzing for the specific patient without intent of sharing results with "the world." I have kept such items on the list when we haven't had updates for these products, merely as a guide. I periodically go through The List and remove them when they seem pretty useless for our benefit today; however, Dr. Dick prefers I keep as much published on the list, even the old listings, in the event their results change and we may be able to recognize some inconsistent patterns with certain companies.

In today's marketplace, products constantly change, including product names and ingredients. We now require more information from those submitting products for evaluation, including labels whenever possible. Then, I am able to identify exactly what the product is. From what I can find, the bars sold in 2007 are different from what is being sold today. The best way to determine what, if any,

hidden ingredients are included is to submit a sample for evaluation. I can tell you that today Soy is added to many more products than years before. Is there a bar you specifically have in mind? I can help you identify the obvious food categories per listed ingredients on label.

I appreciate you bringing this to our attention. I've decided to remove the Bumble Bee Chocolate entries on The Food Resource List to avoid confusion, as the simple results we have listed are easy enough to identify from the current products' labels, and the bars we have listed appear obsolete.

A footnote: Today's commercial food market has created dilemmas and challenges for us who care about what is in our food, as their requirements to label are not as stringent as our personal bodies' need to avoid ingredients even at trace levels. This is why our doctor is so busy evaluating products that are submitted to her to find out if something is contained that is not identified in the listed ingredients. This is also why we use The Food Resource List as a guide; it is impossible for us to predict if a company will change their suppliers for an ingredient, and if the supplier changes their product. I look up a product on our list when shopping, then I read the ingredients on the packaging. If it looks safe from what knowledge I have about what I must avoid, then I will try it. If I feel uncomfortable after eating it, I refrain from it, at least until it is evaluated.

I can understand how this listing may appear confusing at first glance. If you'll note, the last date evaluated is 01/15, evaluated for all the main food categories, the result was Grain, Honey, Sugar. The previous evaluation was in 11/12; the results did not include sugar. Dr. Dick requests that I maintain and list all the eval. results to determine if the product is inconsistent. In this case, it was very different 2-1/2 years later. The company obviously changed its recipe, for whatever reason.

Reply from Sandra:  As you mention, the Itty Bitty Bars in a jar will vary depending on what they have in stock, i.e.,Mababu from Tanzania, Davao from Philippines, etc. If you'll note on The Food Resource List, several Askinosie chocolate bars have been evaluated:

I see that in June 2010 an Itty Bitty Nibble Bar was evaluated. Unfortunately, at this point we can't go back and find out which one. That was evaluated 5-1/2 years ago anyway, so I would use the entries in The List above as your guide. They are all more current, especially those evaluated last year.

Regarding the chocolate you listed that is not already on our List, the obvious ingredients are:

~ 70% Dark Chocolate Cortes Honduras: Sugar. However, it is processed in a facility that also processes milk and wheat. This is probably why some of the above listed bars result in Dairy and Grain as well as sugar. Without evaluating the specific product we can't know for sure.

~ 70% Dark Chocolate + Cocoa Nibs San Jose Del Tambo Ecuador: Same as above.

It is good that this company reveals what else is processed in their factory, so we can be aware of potential issues.

QUESTION THE VALIDITY OF THE CARROLL EVALUATION METHOD?

We have been receiving emails from people who are either interested in getting food intolerance “tested” or have done so and have questions – often suspicions - about how and why our methods work.  Often, their queries are spurred by googling and listening to those from the allopathic fields, who dispute and/or negate that any of the Traditional Nature Cures have a legitimate place in medicinal modalities. 


One letter I received stated, “Can you direct me to the science behind the testing/testing methods? I appreciate being fully informed regarding health decisions.”  Wanting to be “fully informed” is wonderful; however, this declaration also carries the responsibility of being open to that which is new to us.  The directions that allopathic and Naturopathic experts take to address health and wellness are quite different.  Since “mainstream medicine” is most generally the familiar choice, it stands to reason that our ways --- Traditional Nature Cures --- may be difficult for newly introduced people to wrap their heads around.  Bombarded as we are, from ads about pharmaceuticals to HMO plans and hospital organizations, it can be difficult for any of us, unless we diligently follow the dietary plans and our doctors’ recommendations.  Then we truly experience results!

I am sharing a letter received and reply from Dr. Tish here that I think you’ll find informative and interesting.

Question emailed January 2016 from Tani E.: I'm considering getting a food intolerance test; however, I am curious why fats are not included?  If this tests for enzymatic deficiencies, what about genetic deficiencies of lipase for digesting fats? Also, are nuts included, and if not, why?

Reply from Dr. Tish:  Hello Tani, I will try to answer your questions regarding the food intolerance method.  Fats span many food groups…there are fats in dairy; fats in eggs; fats in nuts; fats in fruits such as avocado…so, to simply determine if someone is having problems with digesting fats would be short-sighted.  Lipase is the basic enzyme that digests fats in general.  The Carroll food intolerance method is looking at the food groups; the protein markers on these food groups and if the person has the DNA coding to make specific enzyme reactions occur to fully break down and assimilate that food as nutrition.  If the fat comes from egg, your enzymes first see it as egg; not fat.  The same with dairy…casein is dairy fat but your enzymes will see the protein attached to the fat as coming from dairy; so, if you are dairy intolerant you lack the ability to digest the casein fat. 


We do evaluate nuts and these have separate categories.  Hazelnut, pecan, walnut, almond, peanut, macadamia, beechnut, chestnut…all are evaluated separately and not as one category and this is done for each patient.  The database we provide doesn’t include many details such as this because it is a very huge undertaking to track all of this.  However, [the] individual patient report that I create for patients will include this information if it is found for that patient during the evaluation.

Several years ago, one of our doctors also clarified:  Please remember, I am not a lab, and this is not a laboratory test.  I am a physician in private practice and I offer this for my patients.  This is not an allergy test or any other test for pathology.  This is an historic naturopathic evaluation of dietary reactivity and digestibility unique to the naturopathic profession.

That sounds like a mouthful!  Simply and most important is to be aware that the Food Intolerance Evaluation Method is unique to the ways of Nature Cures.  It is futile to attempt to discuss its validity with allopathic physicians, as they do not approach medicine the way our Naturopaths do. 

We want you to feel comfortable with your decision to follow your food intolerance and sensitivities diets with confidence.  You may find that some of what we continue to share is repetitive --- you already get it!  It is not considered mainstream thinking, so many find it confusing, especially after years of listening to allopathic professionals.  I still find that the questions we receive are enlightening, as with that above regarding fats. 

The concept of food intolerance may be simple, yet with an abundance of variables involved with the body, these methods may often seem confusing, albeit incredulous. Our doctors continue to study and learn from patients.

It is to be noted that, as Agri-biz continues to play with the DNA of our food sources and use harmful chemicals on crops, that more and more people become sensitive to the products.  An obvious example is the increased numbers of people who are now gluten intolerant.  The numbers have risen since the methods of wheat production changed, which consequently increased the gluten content in the plants.

It testifies to the validity of this process as more people enjoy improved health when refraining from their determined food intolerances along with their doctors’ directives for healing.  In my own experience, I quickly felt so much better after cutting potatoes, etc. from my diet that I was an immediate believer!  If I were to follow my doctor’s directives and my health did not improve, then I would question the validity of this modality or what I wasn’t doing correctly for my condition to change.

Please continue to ask us your questions.  We want you to feel as comfortable with the processes as we do, and to graciously share the information we learn with as many who wish to listen!

REMINDER: IMPORTANT!  Per the request of Dr. Zeff, we will continue to print this message in every newsletter from now on. It is an important issue that we believe needs to always be addressed:

On occasion, a Subscriber will ask our doctors a food intolerance question and their responses will slightly differ.  This has sometimes caused confusion and has been expressed directly to one of our doctors by several patients. 

Per our doctors: “…most likely, we are not evaluating foods for, e.g., potato content.  We are evaluating a food for a person with a known potato intolerance…”  Results for one patient to a food can vary from another patient, even though they are intolerant to the same food category.  So, one doctor may determine a different result than any of the other doctors who competently perform this analysis, because they are evaluating for a patient’s specificity to a specific food sample.  “It is one of the peculiarities of the methodology.”

For this reason, we constantly emphasize throughout the Song of Health website that the information found on the website is a guide only.   If you have any personal issues with a product, in other words, an evaluation shows that a food should be OK for you to eat, yet you have a reaction to it anyway, we suggest you refrain from consuming it until you have it evaluated for you personally.

Always, always, always consult your physician with any medical issues you may be experiencing, any drugs you have questions about, or your medical care.  Our purpose is to help you to determine what foods are included in food intolerance categories.  All other information, including articles, are for educational purposes and is not meant to replace your doctor’s care for you.  We are set up as a support team for doctor, patient and Subscriber.  There are many questions Song of Health can answer for you, and we encourage you to ask us first, in regards to food and food intolerances.  All other medical discussions should be directed to your physician.

In some cases, you will see ingredients listed in the “Results” column that are ot included in “Evaluated For.” This is due to: 1) the ingredient has been listed on the packaging; 2) or it is obviously in the stated category; 3) or our doctors evaluated for more than what was asked for. For example, results for milk will be “dairy (D).”

* Under “Purchased At” we no longer furnish where the product was purchased; however, if the product was purchased outside the Pacific Northwest area, the region will be noted.  Sometimes, I will be able to locate a place to purchase a product for you, if requested.
