The Carroll Institute of Natural Healing, co-founded by our renowned Doctors Letitia “Tish” Dick, N.D. and Jared Zeff, N.D., LAc., is an educational opportunity for Naturopathic physicians and students to further their education in the traditional methods of Naturopathy, not otherwise taught in the Naturopathic colleges. This is where physicians and students learn how to perform the Carroll Food Intolerance Evaluation method, constitutional hydrotherapy and other important methods of traditional natural healing.

Song of Health and The Carroll Institute of Natural Healing work together to reach as many people as possible, to educate and help understand the importance of avoiding personal food intolerances, applying traditional Naturopathic methods of healing and naturally restoring the body to health.

We invite everyone to contact us with any questions you may have regarding these methods at manager@songofhealth.com.

QUESTIONS ASKED AND ANSWERED:

Questions emailed to us:

Song of Health has been given permission by our Subscribers to share the following communications with you.  In so doing, we all reap the benefits of learning together.

From Bonnie:  Hi Sandra, I am feeling so discouraged right now.  I've been trying so hard since mid October and it just feels like it's not getting any easier.  It's as if I'm becoming more and more sensitive as time goes by. How long did it take you to get this down? I will think I have some basic meals together only to start reacting to something and back to the drawing board I go! It is so expensive and time consuming.

I know we have the same intolerances.  Can you offer some encouragement that this will get better?  I know you have lived this lifestyle for a long time and probably have it down to a science for yourself.

Thanks again Sandra, I appreciate you! Bonnie

Reply from Sandra:  Hi Bonnie, what I do to get my system back on track is to make vegetable soup and drink the hot broth.  I use onion or leek, garlic, carrots with whatever else that's fresh and sounds good.  Fresh parsley helps to heal and flavor, with salt to taste.  NO pepper, except for cayenne.  Dr. Zeff put me on a vegetable broth only, when I got sick with a severe allergic reaction in and around my eyes. Dr. Tish discovered one of the causes (Vitamin E oil that contained potato); the other was exposure to contaminants in a classroom. After a couple days of drinking just the broth, I called Dr. Zeff and asked if I could add home-canned tuna to it. He asked me why, and I said the same thing you did---I was starving! He paused, then said "ok." The rule of thumb here is that the body needs to cleanse itself. What is needed is to give it easily digestible food and time to detoxify. You may want to give it a go for a day, then add the vegetables in first. This will give you easily digestible nutrients. You should feel a difference in a day or two.  If you still are sick, call your doctor for advice. In health, Sandra

Bonnie:  What's the deal with pepper?  Will take your advice, just curious...

Sandra:  Regarding pepper: Black pepper is very irritating to the stomach and intestinal linings and difficult to digest. It can stay in the body for a very long time and not be expelled.

A Sample From The Forum:

REMEMBER TO GO TO THE FORUM TO SHARE - AND ACCESS – MORE QUESTIONS AND COMMENTS!

UNDER THE CATEGORY FOOD QUESTIONS:

Balsamic Vinegar/Red wine

Posted by Bon, 4th March, 2011:  Does anyone know of a safe one?  I think only one has been tested and I'm willing to have a couple tested but I thought I'd put this out there in case someone has something they are using and not reacting to. Also interested in red wine.  My intolerances are potato and fruit/sugar.  Thanks for any ideas or insight!

Posted by Sandra Strom, CEO of Song of HealthNew items have been posted in The Food Resource List, including ones evaluated a while back but not given to me to list.  Dr. Tish has updated everything, for which I’m in the process of listing - it's really a long one!

Napa Valley Naturals Balsamic Vinegar, evaluated Jan. 2010, potato and sugar free, positive for fruit.

Spectrum Naturals Organic Red Wine Vinegar, eval. Nov. 2009, potato and sugar free, positive for fruit.

Star Italian Kitchen Red Wine Vinegar, eval. Aug. 2009, potato and sugar free, positive for fruit and meat.

Chicken and Beef

Posted by Bon, 9th March, 2011:   Where do you buy it in the Spokane area?  I am trying to find a consistent source for chicken and beef.  I realize there are a few mentioned on The Food Resource List but I can't figure out where to buy them.
I need something potato free.

I was buying both at Huckleberry’s on the south hill at the deli counter but I am now beginning to wonder if it is potato free.  I am reacting to something and cannot figure it out for the life of me.  It's 2 in the morning and I'm wide awake, thinking about chicken. I may just lose my mind over this diet!  I have been eating super bland for the past several days, trying to figure out what I'm reacting to.  This is so FRUSTRATING. My eyes are blood-shot and dry, I have new canker sores, I am fatigued and I cannot sleep, all thanks to my intolerance.  I'm trying so hard to make this work and it's just not right now...Vent over, thanks for listening;)

When I purchase from Huckleberry’s, they put it in plastic and then wrap with butcher paper.  I'm starting to wonder if it's the plastic, but I honestly don't where to start.

I will probably need to have something tested, but right now I would love to have suggestions if you have something that is working for you even if not tested - it would give me a place to start.  Thank you! Thank you!

Posted by Sandra, CEO of Song of HealthI believe Dr. Tish buys Shelton brand at Huckleberry's and Main St. Market. You can ask the butcher not to wrap in plastic, or in the styrofoam trays.  Ask them to just wrap in the butcher paper.  That may help.

Regarding reactions:  Your Naturopath can help you with remedies to help flush the toxins.  Also, I suggest you do a hydrotherapy treatment at home, if not able to get into the doctor's office for one.  That will help to draw toxins out of the body.

Posted by Robin V Smith:  Dear Bon, off the meat subject, I had canker sores for 4 months in a row.  It turns out I had too much acid in my diet.  I had 1 cup of coffee in the morning & 1 cup of tea in the afternoon. When I gave those up, my acid levels stabilized and I haven't had canker sores since.  Hope this helps.  Also, at Yoke’s they have chicken called Just Bare.  That works for me too, although it hasn't been tested.

Posted by R Tegtmeier:  Hi Bon, I believe the "Eating Right" boneless, skinless chicken breasts at Safeway have been tested and are potato free.  I am potato intolerant and I do very well with these.  It's the only chicken I buy.  Also, at Rosauers deli counter, I buy their Painted Hills Beef (this has not been tested and may test as potato but it rests pretty well with me).  One time when I was at Rosauers, I watched the girl put my beef into a plastic bag and I was shocked, as I usually don't see that, and it's a real pain when it gets frozen too.  Anyway, the next time I was in there I mentioned it to the butcher and he said that she shouldn't have done that...They do only wrap in the butcher paper.  Anyway, I know it's hard.  Many things are trial and error for me.  I kind of just try different natural or organic beef from the stores I go to, to see how I react.  When I cook them, I make sure I am not using any new spices or any new side dishes, etc., so I will know it's the meat if I get a reaction.  Hope this helps.

BTW - If you do end up buying the chicken from Safeway, it comes in containers of 6 or 7 breasts and it's a long container.  My recommendation is to take each one out and wrap separately to put in the freezer; otherwise, you will have heck of a time getting it defrosted.  I usually just cook them all up and put a couple in the refrigerator and the rest in the freezer - Works out great.  Ruth

NEW: FOOD LABEL QUIZ

CAN YOU GUESS THE FOOD CATEGORIES OF INGREDIENTS
LISTED ON THIS LABEL?

As part of my goal to continually improve on helping you in the quest of eating safely in accordance with your personal food intolerances, this new section is another way to help you identify suspicious ingredients for you and … HAVE SOME FUN!

  • First identify obvious food categories, i.e. potato starch = potato.
  • Next, identify potential hidden ingredients, i.e. guar gum = potato.
  • Finally, if you can answer this, you are exceptionally brilliant:  What product is this?

The answers are at the bottom of the New Recipes section, just above The Food Resource List Updates.

The following list of ingredients is on a label from a recent product that is included in this month’s Food Resource List updates:

INGREDIENTS: ORGANIC WHOLE OAT FLOUR, ORGANIC CORN FLOUR, ORGANIC OAT BRAN, ORGANIC FRUIT JUICE CONCENTRATE (APPLE, PINEAPPLE, PEAR, OR PEACH), SEA SALT, BAKING SODA. CONTAINS SOY (IN CORN).
MANUFACTURED IN A FACILITY THAT ALSO PROCESSES MILK, HAZELNUTS, ALMONDS, COCONUT, AND WHEAT.

Each month we bring you articles on a myriad of topics regarding health and environmental issues. The main focus of Song of Health is to avail you of expert information on the Carroll Food Intolerance dietary methods. This is the first step to getting and staying well. We feel, however, that there are also many other interesting and important issues to be aware of. It is our goal to share, with you, our findings on what may have a cause and effect on our healthy lives.

ENVIRONMENTAL UPDATES FROM THE U.S. EPA

I am subscribed to receive updates to environmental and health policies from the Environmental Protection Agency.  Each month I will select those I feel are pertinent to share with you, and bring to your attention.  Sandra

EPA Accepting Applications for Environmental Education Grant Funding

WASHINGTON – The U.S. Environmental Protection Agency (EPA) is accepting grant applications for $1.9 million in funding for environmental education projects and programs.  The purpose of the grants is to promote environmental stewardship and help develop knowledgeable and responsible students, teachers and citizens. EPA expects to award at least 20 grants nationwide ranging from a minimum of $15,000 to a maximum of $100,000 and will accept applications until May 2, 2011.

The grants provide financial support for innovative projects that design, demonstrate, and/or disseminate environmental education practices, methods, or techniques.  Projects should involve environmental education activities that go beyond disseminating information.

EPA will be hosting two conference calls for potential applicants interested in additional information about the application process. The conference calls will take place on March 21, 2011 at 11 a.m. Eastern Daylight Time (EDT) and April 6 at 2 p.m. (EDT).  To participate in the conference calls, dial: 1-866-379-5082, and use conference ID number:  48699133 for the call on March 21.  Use conference ID number:  48696117 for the call on April 6.

The Environmental Education Grant Program provides funding to local education agencies, state education or environmental agencies, colleges or universities, not-for-profit organizations, or noncommercial educational broadcasting entities.  Tribal education agencies, which are controlled by an Indian tribe, band or nation, may also apply, including a school or community college.

Since the program began, EPA has provided more than $50 million in funding to more than 3,000 agencies and organizations.

When to Ask Me And When to Contact Your Doctor
By Sandra Strom, CEO of Song of Health

“I’m feeling so discouraged.  I’ve been following my food intolerance diet for nearly 6 months, but I still feel lousy.  I think I’m doing good, feeling better, then I eat a meal and get sick again.”

“I’ve been diagnosed with high blood pressure, allergies, on the verge of diabetes, and now I have a terrible head cold.  What should I do to get well?”

“How long will it take for me to feel good?  I’ve spent so much money for doctor visits already, and I’m tapped out.  Can you help me?”

“I need to know if this avoiding-food-intolerances thing really works.  I’m ready to give up.  Can you offer some encouragement that I will get better and this will get easier?”

Sound familiar?  I’m sure it does to many of you!  I receive these and similar questions from Subscribers all the time, especially those of you who are new to discovering your food intolerances.  Most of you have been referred to Song of Health by your doctors; this is the place to find all the information you need to eat safely.

The lines of who can help with what can oftentimes be fuzzy --- When can Sandra advise me, when must I contact my doctor?  Following is a guideline that may help to understand who can help you with what.

When to Ask Sandra

I am a food intolerance consultant and advisor.  I am not a medical practitioner.  I adhere to following the concepts of natural healing, for which the body is created; and

though I know some basic natural methods taught me by our renowned physicians, along with years of experience, I am not legally qualified to offer what may be construed as medical advice.

What I can do to help you:

  • Answer questions about what is safe for you to eat, why, and how to avoid what is not.
  • Teach you to adapt a recipe in order to avoid food intolerance ingredients.
  • Find substitutes that will work for you.
  • Explain the concepts of natural healing, how eating the wrong foods causes dis-ease, how following the methods of avoiding food intolerances works.
  • Offer the necessary support and encouragement to help keep you on track.
  • Network with fellow Subscribers, to share with each other what you’ve learned, your personal experiences, where you have found products in question, and other ways to support each other.
When to Contact Your Naturopathic Physician

Dr. Tish Dick:  “You should seek care from your Naturopath anytime a symptom or concern lasts more than a few days, or a fever lasts more than 12 hours.”

Your Naturopath determines the cause of your discomfort, such as eating foods you are intolerant to, then diagnoses what conditions exist in your body, what areas need to be targeted specifically for healing, and the best methods to apply for quickening the healing process.   Yes, avoiding your food intolerances is important – and the first step to healing.  Depending on how long your body has been in a toxic state, however, it is usually not all that is required for healing.  The body needs time to reverse a state of illness; it most likely will also require specific boosts that your doctor will administer.

Remember that we didn’t just eat dairy products, for example, for a couple weeks and suddenly realize we’re intolerant to them.  Generally, we have consumed the intolerances for a long time, which has caused our bodies to continually deteriorate.

You can benefit from both your doctor’s and my help.

Together, working as a team, we can both help you, to return to the state of well being that Nature intended.

As a footnote, seeing how consuming food intolerance products for many years can cause drastic resorts, it is a blessing to have the children evaluated as early as possible.  Give them the healthy start for a strong and beautiful life ahead of them!  Many of you have already experienced the difference with your children, and are able to immediately recognize when one of them has gotten into something they “shouldn’t have - ought a.”

Please know that you are always welcome to contact me.  I’m here to help you to the best of my ability, and within my competence.

My intent is for you…

  • to feel safe – safe to contact me, safe in knowing you’re on the right track, safe in knowing you will feel better given the proper time and care;
  • to feel supported and not alone;
  • to become aware, informed, and experienced in knowing how to adapt your lives in a good way.

REMINDER: IMPORTANT!  Per the request of Dr. Zeff, we will continue to print this message in every newsletter from now on. It is an important issue that we believe needs to always be addressed:
On occasion, a subscriber will ask our doctors a question regarding a food intolerance and their responses will slightly differ. This has sometimes caused confusion and has been expressed directly to one of our doctors by several patients.

Per Dr. Zeff: “…most likely, we are not evaluating foods for, e.g., potato content. We are evaluating a food against a blood sample of a person with a known potato intolerance…” Test results for one patient to a food can vary from another patient, even though they are intolerant to the same food category. So, Dr. Watrous may determine a different result than Dr. Zeff, or any of the other doctors who competently perform this testing, because they are testing a patient’s specific blood sample to a specific food sample. As Dr. Zeff puts it, “It is one of the peculiarities of the methodology.

For this reason, we constantly emphasize throughout the Song of Health website that the information found on the website is a guide only. If you have any personal issues with a product, in other words, a test evaluation shows a food should be o.k. for you to eat, yet you have a reaction to it anyway, we suggest you refrain from consuming it until you have it tested for you personally.

Always, always, always consult your physician with any medical issues you may be experiencing, any drugs you have questions about or your medical care. Our purpose is to help you to determine what foods are included in food intolerance categories.  All other information, including articles, are for educational purposes, and is not meant to replace your doctor’s care for you.  We are set up as a support team for doctor, patient and subscriber.  There are many questions Song of Health can answer for you, and we encourage you to ask us first, in regards to food and food intolerances.  All other medical discussions should be directed to your physician.

If you have any questions or comments, please contact us.  We are here to support you and your efforts to claim and maintain great health by refraining from your food intolerances. In Health, Sandra Strom

HOW TO READ THE FOOD RESOURCE LIST AND USE THE KEY:

* As items are submitted and analyzed by our staff doctors, they are then added to the Food Resource List on the Song of Health website. We compile the updated lists to email to you as well.

* The items are listed per category.

* By listing the “Date Evaluated” you can be assured of the most recent updates.

* Under the “Evaluated For” column, “ALL” signifies that the product has been analyzed for all food categories included in the Carroll Food Intolerance Evaluation Method.

In some cases, you will see ingredients listed in the “Results” column that are ot included in “Evaluated For.” This is due to: 1) the ingredient has been listed on the packaging; 2) or it is obviously in the stated category; 3) or our doctors evaluated for more than what was asked for. For example, results for milk will be “dairy (D).”

* Under “Purchased At” we furnish where the product was purchased, whenever the information is available, in the newsletter. (Most brand foods considered “natural” or organic products may be found at your local natural foods store.) We are not able to show the “Purchased At” column on the website, however.
