From Lenore, March 10th:  I can't locate a cottage cheese on The Resource List. Is there one, and under what category?  Can you recommend a brand that's produced by grass-fed cows and that does not have fruit?


I'm going to have to fast on liquids, clear liquids for [a procedure].  I may not be able to be so fruit free, but I'll try. Looking for liquids with no fruit. I guess clear broth it is. It’s one day only, plus nothing the morning of the procedure.

Reply from Sandra:  Hello Lenore.  First, the cottage cheese.  You will find the products listed in The Food Resource List under CHEESE.  I looked up what we had listed, for you ~ there are 3 cottage cheese items that have been evaluated; unfortunately, they all contain Fruit.  I'm guessing it is an enzyme ingredient.  If you are looking for a cultured product that does not contain fruit, here is a thought:  NOW brand Buttermilk Powder contains only Dairy.  I use it all the time, mostly in baking and mixed with organic brown rice flour to dust (coat) fish, etc.  I have also mixed it with water to drink, and even put it in my morning hot cocoa.  It actually is delicious!  Sweet.  It doesn't make a good substitute for eating cottage cheese or another solid food, I admit. 

I googled how cottage cheese is made to see if I could pinpoint where the fruit might be coming from, and if you can make it at home without a fruit derivative.  In the "old days" they just used old, non-pasteurized milk that they basically cooked down and pressed the curds dry.  Years later, cream was added afterward if creamed cottage cheese was desired.  Now, it seems most cottage cheese makers use enzymatic additives to hasten or ensure the process.  If you are so inclined, I could find you a fruit-free recipe for making it.

Next, regarding consuming only liquids prior to your procedure:  Even if you weren't intolerant to fruit, we do not recommend drinking pure juice, unless it is a small amount in water, as it is very difficult on the digestive system trying to break down the equivalent of 5 or 6 fruits.  You are on the right track with clear broth, which you can easily make yourself:  Prepare vegetables of your choice by cutting in 1 inch pieces (potatoes in 2").  Place in pot of water, 2-3 times more in volume than the vegetables.  Add salt, to taste.  Bring to a boil, then turn down to simmer.  Add herbs of choice, such as parsley, cilantro, etc.  Cook until vegetables are soft and the flavor is in the broth.

Unsweetened herb tea is ok to have.  And lots of water is always recommended.

My family doctor, when I was a kid, recommended that fasting once a year was good for the digestive system.  It gave it a rest as well as opportunity to clean out.  I hope that helps.  In health, Sandra

Hi Lenore, I found an easy recipe for cottage cheese that is fruit-free, and it got positive remarks.  Go to: http://www.food.com/recipe/homemade-cottage-cheese-46595.

This recipe contains only 3 ingredients: milk, vinegar, salt to taste.  I'm going to try it too and let you know how it turns out for me.  Keep me posted.  (I'm considering using rice vinegar to see if it imparts any flavor.)  In health, Sandra

From Lenore, March 17thHello there Friend, just received the soaps. I need to tell you that the Boat Coffee works well on getting stains out of coffee and tea cups as well as oils from containers.  Love the stuff!

Thought I might try it on my teeth? 

I'm considering going on the Hormone Reset Diet by Sara Gottfried.  She's an integrative gynecologist.  She's selling protein powders and supplements to support the program.  Her protein powder looks good except for the added other ingredients, [which] are coconut derivative and monk fruit.  I may go ahead with it anyway.

Are there any pea protein powders out there you can recommend with great minerals and probiotics?

Reply from Sandra:  Don't buy protein powders, etc. with your food intolerances!!  Counterproductive. I would recommend contacting Dr. Tish for guidance regarding what you are trying to do. There is a great doctor in San Jose too - Dr. Hogg.  He does food intolerance evaluation also, though I know that's far away.


Lenore:
  You always have great advice. This is all new to me.  I'm surprised more doctors don't deal with food intolerances. Hum!  How to change that???


Sandra:
  Yup, our doctors have fought endlessly just trying to get Naturopaths on board, let alone MDs. That's another story for another day!

From Lenore, March 20th:  1) Are you familiar with Sue Shepherd's FOODMAP Diet?  She believes that food intolerance testing is invalid.  She says the only real way to know is by the food elimination diet.

2) What is your opinion about lactose free milk?  I can't see anything on The Resource List for lactose free milk.  Organic Valley has one.  I'm going to try it for a while.  I think I'll stop drinking almond milk everyday even though I make my own and even though I only have 2 to 4 ounces a day. I make my own almond butter too, but maybe it's all too much.

3) Since pineapple is allowed for me to eat (Cactus family), I thought maybe the dried unsweetened unsulphured pineapple at Trader Joe's would be an option.  Sometimes I’d like something sweet.

Reply from Sandra:  Hello Lenore.  There are as many opinions on what people think the answer is to good health as there are people.  I do not go looking for what others think, though I listen to what goes past me just to know what others say.  There is lots of noise "out there."  I found a method that works for me, the Carroll Food Intolerance Evaluation method.  If you are asking for my opinion regarding elimination diets, I would suggest sticking to your food intol evaluation and working on eliminating all fruit from your diet.  It's exhausting trying to bounce around from concept to concept!  Hopefully, removing what you aren't supposed to have will help, once your body is cleansed of the toxins from fruit, etc. and you are doing your best to maintain good eating habits.

Regarding guessing whether you should have lactose-free milk, almond milk, or whatever to aid a chronic condition you are suffering from:  Please please please contact a Naturopath of your choice to have tests run to determine what is currently going on with your body.  Then THEY can recommend what treatment to begin to get your body back on track.  It sounds to me like you need help more than just watching what you eat, especially when your body has progressed into a chronic condition.  You need help in getting things turned around before you end up with more serious and possibly permanent damage or surgery.  Although I don't go to my doctor often, I am under consistent care - maintaining a schedule of procuring lab tests to determine if/what medications and supplements need to be adjusted, etc.  My doctor keeps a vigilant eye on my condition, as all good doctors should with their patients!

Regarding lactose-free milk:  It is still dairy, so if you have an issue with dairy products, avoid it.  Making your own almond milk is an excellent option.

Re pineapple:  Eat fresh ripe.  You can also have melons.

Do you have enough fiber in your diet? Eating whole grains, flax seed, etc. is a good source for helping to "scrape the innards!"  Hope that helps. 

From Lenore, March 27th:  Are plantains a fruit or vegetable?  I'm getting info on the Web that says they are a starchy veg like taro, sweet potato, etc.

Reply from Sandra:  There are 2 ways how I do constitutional hydro treatments at home (I too hate mess and complication!), finding the first one the easiest when I am home alone and don't have someone to help trade towels for me:

First method:

1) Prepare a cold compress: Soak a hand towel in cold water to saturate, then wring excess water out.  Leave in sink til ready to use. (It will stay cold enough when ready to use).

2) Immediately take as hot a shower or bath as you can for 5 minutes.

3) Very quickly dry off, grab cold wet hand towel, lie down on back and place hand towel over torso.  Quickly cover with a blanket (preferably wool but cotton will do) for 5 minutes.  You should feel the towel slowly warm to your body temperature.  That is when the treatment is complete.

Second method:

This requires a second person to help; and two hand towels.

1)  Have helper soak hand towel in water as hot as you can bear.

2)  With you on your back, the helper places hot towel on your torso.  Cover up, as in method above, for 5 minutes when towel warms to body temp.

3)  Helper removes towel and places wet cold towel over torso.  Cover up for 5 minutes, as in above method.

4)  Turn onto your stomach.  Helper places hot wet towel over back.  Cover up and repeat as above.

5)  Helper removes towel and places wet cold one over back.  Cover up for 5 minutes.  DONE!

School Lunches Don't Need Another Mystery Meat --- Keep Chicken From China Out of School Lunches!

Ask Your Representative to Keep Chicken From China Out of School Lunches!

Dear Sandra, now that China has the green light to send "processed" chicken to the U.S., where will it end up? Chicken nuggets that are frequently marketed to children are the likely target, and because Country of Origin Labeling isn't required for processed foods, we'll have no way of knowing.

Thankfully, there's one way we can help protect kids from another mystery meat. Can you ask your Representative to keep chicken from China out of school lunches?

When it comes to food safety, China has a bad track record. From dangerous levels of mercury in baby formula, to dogs and cats dying of tainted pet food, you've probably heard news stories about the problems with China's food safety standards. There was even a recent incident where expired poultry products were sold to U.S. fast food restaurants in China. Despite these problems, last fall the U.S. Department of Agriculture (USDA) gave Chinese chicken plants the green light to start sending processed chicken to the U.S.

Can you take action to keep chicken from China out of the school lunch program?

Shockingly, the USDA knows that poultry from China isn't safe — they announced that China's systems aren't up to U.S. standards, so China can't ship raw poultry here for sale. Yet they still want to allow the import of poultry that's cooked and processed in China, even though it's produced under the same insufficient safety standards.

Thankfully, Representative Rosa DeLauro has been a champion for keeping our food safe and passed a provision last year that keeps chicken from China out of federal nutrition programs like the school lunch program, the school breakfast program and the summer food service program.

Another provision must be passed in this year's budget to keep the USDA from buying chicken from China for these programs. Can you ask your Representative to keep chicken from China out of the school lunch program?

EPA Awards Student Fellowships in 25 States and Puerto Rico to Support the Next Generation of Environmental Scientists
Washington, DC –Today the U.S. Environmental Protection Agency (EPA) announced 34 fellowships for undergraduate students in 25 states and Puerto Rico to pursue environmental science and related fields of study at universities and colleges across the nation, helping to inspire the next generation of environmental scientists and engineers. The awards, part of EPA’s Greater Research Opportunities (GRO) fellowship program, provide students the opportunity to gain hands-on experience with agency scientists.

“These students’ ambitious and innovative ideas will help create a more sustainable future,” said Lek Kadeli, Acting Assistant Administrator for EPA's Office of Research and Development. “EPA is investing in the next generation of environmental scientists and engineers whose research will help achieve our mission of protecting human health and the environment.”

Previous fellows have been recognized as leaders and educators in environmental health and science. More than 362 fellows have completed EPA’s program and have employed their knowledge and expertise in the workplace. Examples include:
• Evan Bredeweg, a 2006 GRO Fellow, elaborated on his time in the program saying, “The GRO fellowship has definitely helped me pursue my goals. It provided a starting block for me to begin my academic career and helped open doors to further opportunities.”
• Sacoby Wilson, a 1996 GRO fellow, is now an assistant professor with the Maryland Institute for Applied Environmental Health (MIAEH) and Department of Epidemiology and Biostatistics, School of Public Health, University of Maryland-College Park;
• Cynthia Williams, a 2000 GRO fellow, is a systems engineer at the Missile Defense Agency.

The students selected for fellowships are undergraduates entering their junior year. The fellowship provides up to $20,700 a year of academic support that includes both stipend and tuition support as well as $8,600 for an internship during the summer for a combined total of up to $50,000 over the life of the fellowship.

For more than 30 years, EPA’s GRO Fellowship has been providing students in environmental science related fields the tools to succeed not only in their undergraduate studies and internship, but also in their future careers. The GRO program gives institutions the opportunity to grow and create a culture of excellence through their students.

8TH ANNIVERSARY REFLECTION

April is our anniversary month at  and, in tradition, time to once again express much gratitude to all of you, our supporting physicians, and holistic nutritionists for being the reason why we continue to perform our work and services. 

It is also a time of reflection ~ accomplishments and disappointments of the past year, where we are now, and what to look forward to.

Your input, contributions, questions ~ all involvement in the working process of SOH ~ is the most positive note of all.  You are to be commended for taking an active role in, not only your own health, but that of your fellow Members.  Your interaction continually increases; the sophistication of questions and comments are amazing and keep us on our toes! 

Learning how to listen to and be aware of your bodies, and what can potentially affect your well-being, has instigated our doctors to look even deeper into what possible food intolerances may still need to be discovered.  Spurred by further evaluation of patient suffering, our doctors unveiled new food intolerance groups which were published in the Food Categories section.  As stated on the Intro page:  “As these new categories have been recently discovered, they may not be complete.  It takes much research and evaluating foods that may be related to a specific category with persons who are intolerant. Per Dr. Tish, ‘This is how a category is built. It takes time, and this is an ever-developing process."  It never ceases to amaze me how much our doctors have uncovered to help us since Dr. Otis G. Carroll first unraveled the food intolerance mystery, and yet there is always more to learn!

The opportunities to eat healthy have been increasingly challenged in the current environment due to the GMO issues and horrible chemicals still in agricultural use.  We are constantly forced to use our voice, to contact our politicians with our pleas, and to support petitions offering us the right to vote.  We have the right to know what is in our food, to have food labeling, and the right to choose if we want to gamble with GMOs and other unnatural products.  We have the right for our food and environment to be protected.  We believe, as part of our responsibility to SOH Members, that we must share what information we learn with you.  It is to our benefit to stay informed and educated, realizing how serious it is to pay attention to what we consume; thus, emails and articles are included in the newsletters from outside sources. 

My greatest disappointment in the past year is that we haven’t been able to cross implement the website over to the new php format and to implement the new forum program, which would facilitate you finding the immense amount of information on the website.  Simply, it is very expensive to create this website, then to transfer all the existing information to a new format.  It is still starting from scratch, as everything must then be manually transferred over.  Then, all the pages must be linked, etc.  You get the picture.  Time and money...We are still holding on to those plans; hopefully, they will come to fruition sometime this year. 


TM ~ Turning out to be a great addition to our services, the soaps are appreciated not only by fruit intols; everyone seems to be enjoying these vegan soaps.  There is something for everyone, no matter what your intolerance may be...unless you are intolerant to cocoa.  Then, I can’t help you, as this is the major ingredient in coco~sha.  Otherwise, if there is a soap you desire that is not already offered, remember that you can custom order a loaf of soap to your personal specifications.  I am happy to work with you the best I can.

Thank you again, to everyone, for joining me in the quest to be as healthy as we can, supporting each other as a Member of this great team.  This road may sometimes seem difficult, maybe complicated.  Consider the alternate consequences and where we came from ~ how complicated was that!  Feeling lousy all or most of the time; complications with expensive medications and surgeries; those feelings of hopelessness and disappointments of not getting better even after taking drastic measures.  It is easy to forget all that when we have disappointing days now.  This is another huge reason why we are in this together, to remind each other and ourselves what positive progress we make if we are willing to work, even just a little, for it.  Always remember, I am here to help you. Please feel free to contact me, even if you just need a boost on the path.

Here’s to a great YEAR 8 for all of us!

REMINDER: IMPORTANT!  Per the request of Dr. Zeff, we will continue to print this message in every newsletter from now on. It is an important issue that we believe needs to always be addressed:

On occasion, a Subscriber will ask our doctors a food intolerance question and their responses will slightly differ.  This has sometimes caused confusion and has been expressed directly to one of our doctors by several patients. 

Per our doctors: “…most likely, we are not evaluating foods for, e.g., potato content.  We are evaluating a food for a person with a known potato intolerance…”  Results for one patient to a food can vary from another patient, even though they are intolerant to the same food category.  So, one doctor may determine a different result than any of the other doctors who competently perform this analysis, because they are evaluating for a patient’s specificity to a specific food sample.  “It is one of the peculiarities of the methodology.”

For this reason, we constantly emphasize throughout the Song of Health website that the information found on the website is a guide only.   If you have any personal issues with a product, in other words, an evaluation shows that a food should be OK for you to eat, yet you have a reaction to it anyway, we suggest you refrain from consuming it until you have it evaluated for you personally.

Always, always, always consult your physician with any medical issues you may be experiencing, any drugs you have questions about, or your medical care.  Our purpose is to help you to determine what foods are included in food intolerance categories.  All other information, including articles, are for educational purposes and is not meant to replace your doctor’s care for you.  We are set up as a support team for doctor, patient and Subscriber.  There are many questions Song of Health can answer for you, and we encourage you to ask us first, in regards to food and food intolerances.  All other medical discussions should be directed to your physician.

*About this month’s picture:  Orange & Purple Violets ~ I’ve begun to use this picture as a tradition in the April Anniversary issue!  One of the most cheerful flowers of Spring are the adorable and gorgeous faces of Violets, Johnny-Jump-Ups and Pansies, all related to each other.  And they’re edible!  The greens are high in vitamin C; the flowers adorn cakes, add colorful splashes to salads, and can even be steamed.  Let’s honor Nature’s gift to us…Violets!

HOW TO READ THE FOOD RESOURCE LIST AND USE THE KEY:

* As items are submitted and analyzed by our staff doctors, they are then added to the Food Resource List on the Song of Health website. We compile the updated lists to email to you as well.

* The items are listed per category.

* By listing the “Date Evaluated” you can be assured of the most recent updates.

* Under the “Evaluated For” column, “ALL” signifies that the product has been analyzed for all food categories included in the Carroll Food Intolerance Evaluation Method.

In some cases, you will see ingredients listed in the “Results” column that are ot included in “Evaluated For.” This is due to: 1) the ingredient has been listed on the packaging; 2) or it is obviously in the stated category; 3) or our doctors evaluated for more than what was asked for. For example, results for milk will be “dairy (D).”

* Under “Purchased At” we no longer furnish where the product was purchased; however, if the product was purchased outside the Pacific Northwest area, the region will be noted.  Sometimes, I will be able to locate a place to purchase a product for you, if requested.
