From Cordy:  I have a sugar and soy intolerance. On your site it states that I can have agave but my ND says I cannot.  Who do I believe?  Cordy
Reply from Sandra Strom, CEO of Song of Health:  Agave syrup is from the cactus plant. It is possible that if it is refined it would fall into the sugar category, or that certain brands also have sugar added. Our doctors, however, say that honey, maple syrup and agave do not fall into the sugar category, per the Carroll Food Intolerance method. You can copy and paste this and go directly to it as long as you are logged in to Song of Health. So, if you are diabetic or high glycemic, then these other natural sugars (honey, maple syrup, agave syrup) will affect glycemic levels.
Per Dr. Tish, all of the agave syrups she has tested do not evaluate positive for sugar.  Agave is high glycemic, however, so she suggests using barley malt or rice syrup.  In Health, Sandra

Agave that I have tested is not a sugar, but tests as if it is a "neutral" sweetener.  It will have an effect on the pancreas like any sweetener will. It will cause insulin to be released so diabetic patients must be aware of this. For our food intolerance diets, agave is not a "sugar".  Dr. Letitia Dick

My understanding is that the majority of B vitamins are a yeast based product.  The yeast is either grown on a sugar, or more cheaply on a potato starch base. This is, I believe, why nearly all B complex supplements are potato. Thorne may not know how their B vitamin source is produced. They, like many other companies, purchase the raw material from a pharmaceutical house and then compound it into their own proprietary blend. When I test B complexes, there are very few that are not potato.

Most injectable B vitamins are not potato...I assume they are cultured on a sugar base, or perhaps there is more filtration and purification in the product so that it is sterile and clean for injecting.  Dr. Tish

From “My Gmail”:  Looking for a recipe to make peanut butter cookies without using brown
sugar, just regular cane sugar. Also, not shortening but butter or
oil as a substitute.
Reply from Sandra:  You can substitute the butter or oil 1:1 for the shortening. It will actually taste better. The oil will make the cookies crisper, especially if you use peanut oil. It's super for cookie making. You can also use 1/2 butter and 1/2 oil.

Re the sugar:  substitute 1:1 white for brown. The brown sugar gives a richer flavor, but I don't use any of the refined sugars.  I use honey, 1/2 cup to 1 cup sugar.  I also use maple syrup, increase flour just a bit to adjust batter, if necessary.

Chlorine, in its natural state as chloride ion, is part of a common salt which is necessary to human life in its trace element form and found abundantly in the oceans.  The issue of chlorine is when and how it is manufactured and used in a compound form, generally used in industrial applications, such as disinfecting communal water supplies.

The concern of chlorine is that when it mixes with other compounds it causes adverse health effects when exposed for extended periods of time.  When present in bathing water, it can be absorbed through the skin and the chemicals can be inhaled through the steam, potentially irritating the respiratory system.
Reply by DR. TISH. Chlorine dries your skin out and can make it itchy. Regarding it affecting calcium absorption: You don't absorb calcium through the skin ... is that what the question was?  Dr. Tish

~ Posted by Bird: I’m still interested in anything more you can say about each of the difficult to digest foods and my other questions (i.e. are eggs easier to digest when they're raw or mixed in soups or very soft boiled).  Interesting that meat is not listed as a difficult to eat food.  Also, are nuts easier to digest when they're butters or when they're raw... or maybe cooked in some with soups, muffins, etc.).

Meats are 2 hours foods which make them easy to digest; except pork, which is a 4 hour food (this is not talking about processed lunch meats or hot dogs - but fresh meats.

Egg is harder to digest when hard boiled.  Raw, scrambled, soft boiled are easier to digest.

Peanuts (a legume) are very dense in nutrition and difficult to digest.

All nuts are 4 to 6 hour foods.  Nut butters are just as hard to digest as
the nuts themselves. The question is, can you digest 1/2 cup almonds?  Then you can digest 1/4 cup almond butter.  Hope this helps. Dr. Tish

I see on the Fruit page hawthorn berry, hibiscus and rose hips as good sources of vitamin C. What are these strange sounding foods and how would I incorporate them into my diet?

There are a number of uses for hawthorne, hibiscus and rose hips.  The most common use of all of them is tea.

Hawthorne berries, also known as mayhaw or whitethorn, grow on a bush.  The berries can be dried or crushed and used to make tea.  The berry pulp can also be used to make jelly, jam, syrup or wine.
Commercial tea is made from the "sepal" part of the hibiscus flower.  Simply, it is the smaller, inner petal of the flower.  The leaves of the species hibiscus cannabinus, or gongura, can be steamed and eaten as a vegetable.  The fruit of the rosella species can be used to make jam.

Rose hips, which is the berry on the rose bush, makes a wonderful tea.  It can also be dried or crushed.  And it makes a flavorful jelly or jam, which can be used in other cooking.  I’ve seen recipes get creative using rose hips to make a thick soup or pudding.  Their tartness generally needs to be sweetened in recipes, as do hawthorne berries.  Wild rose hips can be picked in August, depending on the area.

The Cuisinart ice cream maker does not need salt and is very quick.  I use a pre-frozen core that you store in your freezer.  If you do use the ice cream makers that need rock salt to melt the ice around the canister, and bring the temperature to the right range to freeze the ice cream, know that the rock salt and melting ice will not get into your ice cream mixture (unless you overfill the barrel with ice and water). all rock salts test potato.

REMINDER: IMPORTANT!  Per the request of Dr. Zeff, we will continue to print this message in every newsletter from now on. It is an important issue that we believe needs to always be addressed:
On occasion, a subscriber will ask our doctors a question regarding a food intolerance and their responses will slightly differ. This has sometimes caused confusion and has been expressed directly to one of our doctors by several patients.

Per Dr. Zeff: “…most likely, we are not evaluating foods for, e.g., potato content. We are evaluating a food against a blood sample of a person with a known potato intolerance…” Test results for one patient to a food can vary from another patient, even though they are intolerant to the same food category. So, Dr. Watrous may determine a different result than Dr. Zeff, or any of the other doctors who competently perform this testing, because they are testing a patient’s specific blood sample to a specific food sample. As Dr. Zeff puts it, “It is one of the peculiarities of the methodology.

For this reason, we constantly emphasize throughout the Song of Health website that the information found on the website is a guide only. If you have any personal issues with a product, in other words, a test evaluation shows a food should be o.k. for you to eat, yet you have a reaction to it anyway, we suggest you refrain from consuming it until you have it tested for you personally.

Always, always, always consult your physician with any medical issues you may be experiencing, any drugs you have questions about or your medical care. Our purpose is to help you to determine what foods are included in food intolerance categories. THE DIRTY DOZEN ---
MOST PESTICIDE LADEN FOODS

It’s in the mainstream news, so it’s no secret --- there has been a growing concern, even among those who believe what Big Brother tells them, that the food we eat may be causing us serious health issues.  Amongst all the fervor, the federal Environmental Protection Agency (EPA) is at odds with those scientists, researchers and physicians who believe that any amount, minute or not, of chemical toxins ingested is going to cause a mutation that is so powerful it will affect the DNA of an exposed person, thus also affecting consequent generations.  That’s powerful stuff!

Here, at Song of Health, we constantly stress the importance of eating organically grown, non-sprayed, and non-treated food products to protect ourselves from chemicals that have proven themselves suspect to triggering serious health conditions.

* Pesticides are chemicals used to eradicate or prevent unwanted insects and viral bugs.
* Herbicides are chemical treatments employed to eliminate unwanted plants, considered weeds. 
* Chemical fertilizers used to enhance growth are chosen over organic, natural methods of building the soil.

These products are absorbed by the plants we consequently ingest.  Although the EPA has concluded that limited use of many of these chemicals is safe for human consumption, there is growing evidence of symptoms experienced that otherwise argue the point.

The EPA’s statement on Pesticides – Health and Safety states:

“Pesticides are designed to (in most cases) kill pests. Many pesticides can also pose risks to people.  However, in many cases the amount of pesticide people are likely to be exposed to is too small to pose a risk. To determine risk, one must consider both the toxicity or hazard of the pesticide and the likelihood of exposure.  A low level of exposure to a very toxic pesticide may be no more dangerous than a high level of exposure to a relatively low toxicity pesticide, for example.” ***

This is in direct conflict with the conclusions of Environmental Working Group (EWG), a non-profit group that focuses on public health issues and has compiled information from nearly 100,000 reports released from the U.S. Department of Agriculture and the U.S. Food and Drug Administration, in an effort to determine what agricultural products are the most and least affected by chemical residue. **

The EPA does acknowledge potential health effects of pesticides, depending on the type.  Some affect the nervous system, such as organophosphates and carbamates; some are skin and eye irritants; others are known carcinogens; yet others affect the hormone and endocrine system.  To see a list of many chemical pesticide assessments by the EPA, click on http://www.epa.gov/pesticides/reregistration/status.htm.  In determining whether effects of pesticides on humans are acceptable, the EPA determines if there is “reasonable certainty of no harm” posed by pesticide residues allowed to remain on food.***

The “Dirty Dozen” are identified.

Recently, a report was published by Environmental Working Group (EWG), identifying “the Dirty Dozen” – produce that has tested positive for the most pesticide residue. "The list is based on pesticide tests conducted after the produce was washed with a USDA high-power pressure water system. The numbers reflect the closest thing to what consumers are buying at the store," according to EWG’s Amy Rosenthal.*

The “Dirty Dozen” is a list of fruits and vegetables that are most susceptible, likely due to their soft skins that tend to more easily absorb pesticides.  They contain from 47 to 67 pesticides per serving!

Although some fruits and vegetables are not organically grown, they are considered to be safe to eat, according to EWG.  These products have “a strong outer layer that provides a defense against pesticide contamination.” **

Environmental Working Group acknowledges that data from long-term studies aren't available but warns consumers of the potential dangers of pesticide residues.

"Pesticides are designed to kill things. Why wait for 20 years to discover they are bad for us?" Rosenthal said.

Per Dr. Philip Landrigan, chairman of the Department of Preventive Medicine at Mount Sinai School of Medicine in New York, "A kid's brain goes through extraordinary development, and if pesticides get into the brain, it can cause damage.” *

Can pesticides be washed away?

According to EWP, not necessarily.  To reiterate, the pesticide tests mentioned above were conducted after the food had been power-washed by the USDA.

Some pesticides are effective systemically – they are absorbed through the roots, up into the plant, and then kill the pest that attempts to feed on it.  It cannot be washed from the surface because it is inside the plant. 

"We've found that washing doesn't do much," Rosenthal said. "Peeling can help, although you have to take into account that the pesticides are in the water, so they can be inside the fruit because of the soil."

It must still be emphasized that all fresh produce, whether it's grown with or without pesticides, should be washed with water to remove dirt and potentially harmful bacteria.

And it is generally agreed among health experts that, when it comes to the Dirty Dozen list, choose organic whenever available.

As Dr. Landrigan so aptly says, "To the extent you can afford to do so, [parents] should simply buy organic, because there have been some very good studies that shows people who eat mostly organic food reduce 95 percent of pesticides [in their body] in two weeks." *

 FOOD TIPS FROM SANDRA:

* The herb lemon balm is fruit-free, yet evokes a wonderfully mild citrus-y flavor.  Use it in cooking, baking, tea and beverages as a substitute for lemon.  If cooking with lemon balm, add it at the last minute.  It is fabulous used with fish.  Put a sprig of fresh lemon balm in a glass of filtered water for a refreshing summer cooler. If desired, add a pinch of spearmint.

* I often list exotic pepper as an ingredient in my cooking and have been asked what it is.  What makes it different from regular black pepper?  Exotic pepper is a mixture of peppercorns that are different colors and have definite flavors, plus coriander – the seed of the cilantro herb plant.  Generally, red and white and black corns are combined with the coriander.  When I make my own I omit the black pepper, as it is very irritating to the intestinal lining.  Sometimes, I prefer to use just coriander, which has a bit of a sweet flavor.  Mix your own - experiment!  The corns can be ground in a processor or with a mortar in pestle, which is my personal preference.

* It is the honorable and respectful thing to remember the story of how Fry Bread came to be a staple for the Native Americans who suffered greatly during relocation to the reservations.  Here is the story of Fry Bread, as told by Cynthia Detterick-Pineda:

Indian fry bread is tradition to the Navajo, and comes with a story of great pain and suffering.  Though the tradition of fry bread is common among many Southwestern Tribes, it is the Navajo who developed this recipe.

The Navajo planters lived from the Earth as their ancestors had for hundreds of years before.  They also raised livestock to feed their family.  The Navajo dinetah (or homeland) was bordered by the four sacred mountains, from northeastern Arizona, western New Mexico, and north into Utah and Colorado.  They planted crops in the fertile valley lands, such as Canyon de Chelly, known for Anasazi ruins.

The Navajo traded with the Spanish, Mexican, Pueblos, Apache, Comanche, and even the early American pioneers.  Around 1846, large numbers of pioneers moved into the area and the cavalry came with them.  This is when troubles began. The troubles escalated with the murder or Narbona (1766-1849), a well-respected Navajo leader, on August 31, 1849.

On this day, Narbona along with several hundred of his warriors, had come to meet and discuss peace with U.S. Colonel John M. Washington and others of the military stationed in the area.  There had been trouble with the “New Men”, the New Mexican settlers who had driven Mexican settlers out of the area.  After several hours, it was believed a settlement had been agreed upon. However, a young warrior by the name of Sandoval, had plans of his own.  Mounting his horse, he began to ride in front of the Navajo party, attempting to have them break the treaty. A U.S. Calvary soldier began to say that one of the horses ridden by a Navajo was his, and what peace there was in the meeting was disintegrating into battle.

Colonel Washington commanded the Navajo to stand down and return the horse to the soldier or he would fire into them. The rider and horse were now gone, and the Navajo party did not comply.  A canon was fired, and Narbona was mortally wounded. It is told that he was scalped by a U.S. soldier as he lay dying.

This disastrous attempt at peace led to the “Long Walks”.  In September 1863, Kit Carson (1809-1868) was dispatched into Navajo land to retrieve a surrender. When no Navajo came to meet with him, he ordered the burning of the land. Attempts were made to starve out the Navajo, and many were captured and taken to Bosque Redondo, near Fort Sumner. Hundreds starved on the 300 mile walk, and more would die later in the crowded and disparaging conditions. Navajo were placed with the Mescalero Apache, where home peace was often not the case. The camps were meant for 4,000 to 5,000 people, yet there were now over 9,000 people, and supplies were meager.

The government supplies of lard, flour, salt, sugar, baking powder or yeast, and powdered milk were often rancid. Fry bread came from these few foods provided during the 4 years of captivity. 

Since that time, it has become common food at most all Pow Wows of numerous tribes.

To some, Indian Fry Bread is a sacred tradition.  It is to be consumed by the people until the earth has again become purified.
