REMINDER: IMPORTANT!  We will continue to print this message in every newsletter from now on. It is an important issue that we believe needs to always be addressed:
On occasion, a subscriber will ask our doctors a question regarding a food intolerance and their responses will slightly differ. This has sometimes caused confusion and has been expressed directly to one of our doctors by several patients.

Per Dr. Zeff: “…most likely, we are not evaluating foods for, e.g., potato content. We are evaluating a food against a blood sample of a person with a known potato intolerance…” Test results for one patient to a food can vary from another patient, even though they are intolerant to the same food category. So, Dr. Watrous may determine a different result than Dr. Zeff, or any of the other doctors who competently perform this testing, because they are testing a patient’s specific blood sample to a specific food sample. As Dr. Zeff puts it, “It is one of the peculiarities of the methodology.

For this reason, we constantly emphasize throughout the Song of Health website that the information found on the website is a guide only. If you have any personal issues with a product, in other words, a test evaluation shows a food should be o.k. for you to eat, yet you have a reaction to it anyway, we suggest you refrain from consuming it until you have it tested for you personally.

Always, always, always consult your physician with any medical issues you may be experiencing, any drugs you have questions about or your medical care. Our purpose is to help you to determine what foods are included in food intolerance categories. All other information, including articles, are for educational purposes, and is not meant to replace your doctor’s care for you. We are set up as a support team for doctor, patient and subscriber. There are many questions Song of Health can answer for you, and we encourage you to ask us first, in regards to food and food intolerances. What we are not qualified to answer directly, we refer to our doctors and they, in return email their responses to us. You may consider Song of Health as your information center.

Hi Sandra.  I've heard that salt can cause hardening of the arteries and high blood pressure. Is that true also of the sea salts, particularly Celtic sea salt? Susan

Reply from Sandra:
The salt controversy leaves out a lot of details. We need salt. It's the quality of salt that matters.

We listened to a doctor speak about the salt issue at the Naturopathic Conference last spring; I was looking for the information to share with you, but I haven't been able to find the lecture notes.  I did find a great article, however, on the New Zealand Society of Naturopaths’ website, at http://www.naturopath.org.nz/salt.html. Please let me know if you aren't able to find it and I will copy it and email it to you.  The types of salts are explained; the method of extracting mined salt and how the important minerals and nutrients are destroyed in the process; the importance of "sole" (pronounced so-lay), which is salt and water, the healing powers of sole, and the vital minerals required in our diet are found in pure sea salt (such as Celtic salt).  I think you'll find all your questions answered in that article.

I have also asked our doctors if they have any information they would like to contribute to the salt controversy.  Hope this answers your question.

“…Salt from the Isles of Noirmoutier and de Ré, dried only by the sun & wind, does not undergo any treatment after harvesting.  Unlike many other sea salts which have a bleached white appearance, our salts are neither washed or refined. They are grey in appearance, which means they are naturally high in mineral salts - magnesium, sodium, potassium, calcium and in trace elements - manganese, iron and zinc.

These trace elements and minerals are essential to the formation and maintenance of bones, muscles and other body structures. Salt also helps maintain a smooth metabolism.

Most salt consumed today has lost its natural properties through processing and ends up without essential trace elements and vital minerals…”

Reply from Dr. Zeff:
Salt is necessary for life. The word "salary" comes from the Latin for salt ("sal"), because it was used to pay soldiers’ wages at one time.I use a natural, unrefinedsea salt in cooking daily. Some salt is contaminated with potato or possibly other things, so people with various allergies need to be careful which salt they use. The adrenal glands need salt to function, as does the heart and the nerves. Salt does not cause hardening of the arteries. Since blood pressure is, in part, controlled by how much salt is in the body, in high blood pressure and some kinds of heart disease it is prudent to reduce one's intake. But going salt-free may cause other problems. Appropriate use of this needed substance is the key, and that is an individual thing. From Diane S: Hi Sandra,
I made some hard copies of the recipes today and found that at the end of the page the sentence is cut in half horizontally, leaving half of the sentence on one page and the other half on the next, making it difficult to read. I have not experienced this with copying from any other website. Is it possible to have an icon to click on that would allow for a "Printer Friendly Version"?

Reply from Sandra:  Hello Diane. Thank you for sharing. It is greatly appreciated. I'll address your comments:

Re: printing out the recipes - my personal apologies for the printing issue. I will forward this to my webmaster so he can help me clean it up what I have personally changed and added. We discussed possibly making "printable versions" of the pages, [which is a highly consuming and constantly changing process], and Shawn (our webmaster) figured people would cut and paste on to their word processing program, thinking this would be easiest. We will look into seeing if there is a way of making it cleaner and easier for you.

Is anyone else having an issue with cutting and pasting recipes from any of the sections, or printing them directly from the website?  Please let us know by emailing us at manager@songofhealth.com.  Thank you.

Recently, I sent the following letter to the Lundberg Family Farms Company, regarding the hidden ingredients in their products.  When/if I receive a response, I will share it with you:

Hello,
My name is Sandra Strom and I run the website www.songofhealth.com, an information resource on food intolerances. One of the services offered is a list of foods that have been evaluated by our naturopaths for hidden ingredients, in accordance with the Carroll Food Intolerance Evaluation method. Your products are often brought in to the clinic to be evaluated. Oftentimes, your grain products will analyze positive for fruit, yet there is nothing on your packaging to allude to fruit being in your product.

Recently, your long grain brown rice was evaluated for all categories, per the Carroll method (dairy, egg, fruit, grain, honey, meat, mine salt, potato, seafood, sea salt, soy, and sugar), and it analyzed positive for potato! Would you please be able to explain to me what is in your process of manufacturing and packaging the rice to get to market that would include potato?

Thank you for your help. There are many of us who are not able to use your products because of these other ingredients. It would help us to know why they are a part of an unrelated product, i.e. grain. We understand, with pasta the yeast used will often be derived from potato. It is baffling to us, though, why just the grain would include some sort of potato derivative. Is it actually in the grain, or is it in your packaging?

The following is a letter written by a member of a “Google Group” of Dr. Lewis Mehl-Madrona, M.D., who is a supporter of Song of Health and our doctors. In the spirit of my article in Sharing Experiences, “Going Out on a Limb…,” and given permission to share this “Coyote’s” letter with you, I thought you might enjoy reading this:

Dear Lewis Coyotes and Class Members,

It seems very clearthat both our emotions and the resulting emotional chemistry, along with our thoughts and the neuro-pathways they strengthen, have a direct and inseparable relationship with our physical and energetic experience.  We are creative beings; we are creators...so everything counts...Every thought, every feeling, not onlybecomes who we are but also who the universe is, because we are the universe.

The confusion arises for mewhen I consider where my “inner” creativity and the “outer” seemingly separate forces of other people and the world around me connect and how they balance and affect each other. If I am thinking“negative” thoughts about myself, how is it different from when

someone else is thinking these thoughts about me, judgingme orsending me “bad” vibes?  I don’t believe that our individual thoughts and emotions affect only the body they are attached to.  They can fill a room with aheavy feeling, i.e., aworkplace etc.  How far reaching are each person’s thoughts and feelings?  Are they like sound waves?  Do they radiateout forever?  What responsibility do we have to others and planet regarding our own healthy systems?  Our thoughts, feelings, body actions, etc...all send an energetic message and contribute in some way to everything.

Where does Spirit come in?  If we are energetic systems that flow in and around our bodies, but also out of them beyond time and space, how do we differ from Spirit? What’s the difference between praying for help in changing our lives and health for the better anddoing personal work to center our thoughts and feelings on a more “positive” pathway?  One seems to come from outside of us...one from within us.  But I ask, is there a difference, or this a made up separation to keep ourselves small, to keep us from knowing and experiencing our true creative power --- our ability to re-arrange every cell in our bodies, change our eye color and change the world around us with our thoughts?

If we are this powerful, then is anyone ever avictimof anything?  Does owning this much responsibility for our health take away our humility, our ability to have compassion for ourselves and others?  It would be easy to say, coming from this model of creativity, that if someone was sick and suffering, well…they brought it on themselves and they have the power to change it.  People say, “I would never have chosen this!”  

So does it all fit together?  I don’t have the answer...but I’m really curious to hear what all you have to say.  Much love to you Lewis, and love to all, Monté G.

The History of Windrose Naturopathic Clinic: The Legacy of Lindlahr, Carroll, and Dick

Dr. Henry Lindlahr trained in Europe, learning the water cure therapies of Priessnitz/ Kneipp.  He ran a Sanatorium and education facility in the south, training with Benedict Lust (the father of our medicine). 

Otis G. Carroll, a young man with juvenile rheumatoid arthritis, was cured of his arthritis by the water therapies of Doctors Ledoux and Lindlahr.  He enrolled in Lindlahr’s college.  Already a professor himself, teaching electrical engineering, he became a physician.  He then moved west to Spokane, Washington to set up a similar clinic as Lindlahr’s Sanatorium.

Dr. O.G. Carroll’s clinic became known as the busiest medical practice west of the Mississippi, as his facility on Boone Avenue was highlighted in Time Magazine in the 1950’s.

Harold Dick, a post WWII veteran, began a mechanics shop in Caldwell, Idaho with his brother Paul.  With extended Mennonite families running farms and businesses, there were many relatives with ailments.  Paul had inoperative bleeding stomach ulcers.  Ruby Dick, Harold’s wife had rheumatoid arthritis and was crippled.  With three young children to care for and Paul’s family to also support, Harold was keeping the farm and car business going.

A car was towed into the shop one day, with a man who was in a hurry to get back to Spokane.  Harold explained that he would have to wait until the following day, as there were several other vehicles before his.  When asked why Paul wasn’t able to work on his vehicle (Paul was slumped over a heater, warming his sore stomach), Harold explained that he was too ill to work. 

The man told Harold of a Sanapractor in Spokane, Washington who could help Paul by advising him of a proper diet and prescribing hydrotherapy.  Harold explained that Paul had seen many specialists.  In fact, he had already endured three stomach surgeries and was no better off.  The man encouraged Harold to take Paul to see this Sanapractor, Otis G. Carroll.  The man, whose name has been forgotten, happened to be Dr. O.G. Carroll’s accountant.

After a phone call to the Sanatorium in Spokane, Harold drove Paul for a consult with Doc Carroll.  It was determined that Paul had a food intolerance to all dairy and must also keep fruit and sugar separate in his diet.  After returning to Idaho, within just a few days of discontinuing dairy, Paul stopped vomiting blood.  His diseased stomach was healing.  It seemed miraculous.  Why hadn’t traditional medical doctors known this?  Why had they done these surgeries if simply a change of diet would heal Paul’s ulcers?

Ruby was also very ill.  She had prescription medications for her arthritis that were damaging her liver.  By the time she arrived to see Doc Carroll, Ruby was in liver failure.  She was in critical condition and not expected to live.  “OG” refused to take her as a patient due to the severity of her illness.  At the time, if a patient died in the care of a Sanapractor/Naturopath, the physician was arrested and jailed for manslaughter.  It wasn’t until many more relatives came for care and pleaded Ruby’s case that he agreed to test her food intolerance; still though, refusing to accept her as a therapy patient.

Being intolerant to potatoes, Ruby had to change her meal plans to differ from the family.  They were German, living in Idaho, eating potatoes frequently.  As Ruby improved, Doc Carroll accepted her as a hydrotherapy patient.

Within 18 months Ruby was medication free, pain free, and arthritis free.  Seeing the unbelievable results of the care from Dr. Carroll, Harold decided to change his profession in order to care for his Mennonite community and family.  He enrolled in Western States Chiropractic College in 1953.  This was the only college in the United States that still had a Naturopathic licensure program.

In the time between the end of WWII and the 1950’s, all of the Naturopathic and Homeopathic Universities in the United States were forced to close, except for Western States in Portland, Oregon.  The A.M.A. passed licensure in nearly all states, abolishing laws supportive of Naturopathy.  The large colleges in Chicago, and even Dr. Lindlahr’s medical Sanapractor curriculum, were forever deemed illegal to train practitioners.

Harold graduated in a class of about 20 practitioners from Western States with duel licensure, in Chiropractic (DC) and Doctors of Naturopathic Medicine (ND).   Upon licensure in Washington and Oregon states, Harold returned to Spokane where Dr. O.G. Carroll accepted him for a three-year residency.

Washington State had turned its Sanapractor license into a license for Doctors of Naturopathic Medicine during this time of medical change in the nation.  Both Washington and Oregon developed Naturopathic Licensing Boards with new laws and requirements of education and practice. 

Harold practiced with Doc Carroll, his son Dr. William (Bill) Carroll, and Dr. Leo Scott from 1955 to 1958.  In 1959 Harold began a separate practice with the support of an old-time medical physician, Dr. Earl E. Loffler.  Dr. Loffler was retiring and wanted a small office to continue to see patients on occasion.  Dr. Loffler helped finance and lease office space at 604 West Garland Avenue. 

In 1960-1961 a house on the corner of Garland Avenue and Jefferson Street became available. Yet, knowing that it was too small for the future clinic he envisioned, Harold purchased this lot at 1137 West Garland Avenue.  The remodel included lifting the building from its foundation, digging out a basement, and adding a full concrete structure underneath.  Taking off the front porch allowed for an extension onto the north side of the building, which became the waiting room and changing room.  Bedrooms became office and exam rooms.  The living room lost the fireplace (the entire brick wall and the west side fell away during the lifting of the structure), creating the space for the five therapy bays.

1962 was an eventful year.  Harold moved the clinic into the newly remodeled office, Dr. O.G. Carroll passed away, and Letitia Dick was born (the youngest of five children, and the second child since Ruby recovered from her critical illness). 

The clinic had sloping lawns with tall Locust trees surrounding the building atop a four-foot rise.  In the 1970’s the parking lot was paved, the trees cut down, and the lawn landscaped.  In the 1980’s yellow siding was added to the structure.  A sprinkler system with a rock retaining wall now encircled the rise, making lawn mowing much easier.  (This made the teenager in the family much happier).  The late 1980’s involved a change to the entry door as it was relocated from facing west to facing south.  This allowed a very small space to be carved out for a reception “cubby” in the waiting room area.

Dr. Harold expanded his licensure and training in the 1970’s and 1980’s.  The 70’s opened up trade with China as President Nixon visited the Great Wall.  Medicine of Asia became of interest and Red China became open to doctors from the states traveling to learn acupuncture and Chinese botanicals.  Harold teamed up with other Naturopaths and took an epic sabbatical.  Traveling from Hong Kong into the interior of China, they trained at hospitals where surgeries occurred with only sedation by acupuncture needles.  Harold came back after two months in China and began utilizing a new modality. 

During this time period, Harold had also been working with a renowned Homeopath from India.  Dr. Singh began a computerized system of analysis for homeopathy, which Harold implemented in the clinic.  After running this system for a number of years, Harold decided he could build a better mousetrap.  He learned the new world of computer programming, purchased an Osborne computer, and set out to create his own Homeopathic analysis program.  Homeopathy and Chinese Medicine filled his never-ending quest for methods of healing patients, at least for the time being. 

The 1970’s also brought a lawsuit against Harold by the State Attorney General, Slade Gordon.  There was no basis for the suit, other than Gordon was on a mission to finally get rid of Naturopathic Doctors in Washington State.  He believed this would be a political feather in his cap.  After hiding in a patient’s basement for 3 months, never appearing in court, Harold won the suit.  This cost the family thousands of dollars in lost revenue, as the clinic was closed this entire time and the attorney fees were extreme.  Family members were followed and the home was under surveillance 24/7.  Harold had an arrest warrant issued for him, but he never surfaced.  Naturopathy was under great trials, as was the family.  Letitia, at this time, was 12 years old.  Forever, will the memory of this time follow her.  This almost stopped her from ever considering following in her father’s footsteps.

Dr. Harold was concerned about Naturopathy loosing licensure in Arizona, Washington and Oregon, where he held licenses.  These states’ laws were going through Sunset review.  All of the ND’s were afraid of loosing their rights to practice; which was probable with the power of the Medical Associations behind the revisions of the laws to ostracize natural healing therapies.  Osteopaths lost their own licensing boards and became part of the Medical Association.  A number of Naturopaths decided to sit for the international medical license exams.  The thinking was that if they lost Naturopathy licensure, they would survive with Medical degrees.  Harold, the German Mennonite farmer from a small family in Nebraska, turned mechanic, turned Chiropractor/Naturopath, turned Chinese Medicine and Homeopathy practitioner, became a licensed Medical Doctor.  He passed the medical board exams the first try.  He never told anyone.  He didn’t want to “tarnish my reputation as a real doctor” by admitting to anyone that he actually had an MD degree as well.  (He also got a pilots license, but that is another story). 

Dr. Letitia Dick graduated from National College of Naturopathic Medicine in 1990.  She began a three-year residency with her father, Harold.  In 1993 Harold had a stroke at the clinic.  He was cared for at his home by Ruby and Letitia.  It was soon determined the stroke developed from a brain tumor, and sadly, metastatic cancer.  Harold was terminally ill, yet with Naturopathic care he had very little pain.  He lived 9 months (remarkably extending the expected one month time frame given upon diagnosis).  Harold passed away in November of 1994.  He was 73 years old. 

Letitia continued the business.  One day, as she was water coloring with her children, she became inspired by the artwork and created a name and logo for the practice - Windrose Naturopathic Clinic. The logo is a rose, signifying beauty and simplicity, with Laurel wreaths around the flower, signifying knowledge.  Letitia also added a more feminine look to the healing center.  Lace curtains cover therapy windows; rose curtains hang in the waiting room.

A severe windstorm, in 1994, took off the fiberglass ramp-way roof, splintering pieces two feet long and sending them up to four blocks away.  The storm damage repair included a new full roof installed with a permanent structure over the entry ramp; as well as an enclosure with a large window for a back stairway that was added to the office space, and now overlooks a small herbal courtyard.  Not long after this, new carpeting replaced the 30-year-old white sculpted rug.  Fresh green paint adorned the changing room and the bathroom gleamed with glossy white.  A complete electrical upgrade brought the clinic up to full speed.  Rotary dial telephones were finally replaced by an integrated multi-phone system.  (Wow, about time!!  Actually, this happened many years prior, but had to mention this somewhere in the time line.  It was a BIG deal).

The early 2000’s brought a new floor with plumbing upgrades, along with a pedestal sink in the bathroom.  That was the visible part.  Below, in the basement, 40+ years of clinical history were sorted and cleaned. 

Dr. Caryn Potenza joined the clinic in 2002.  She brings a strong commitment to patient care and deep respect for Classical Naturopathy.  Numerous magnificent employees have worked in this healing establishment:  From Ida and Phyllis, Harold’s nurses, to Jen, Serana, JoJo, Janet, Autemn, Simone, and many, many others … to current wonderful women who keep it all running smoothly… Elizabeth, Heather, Jolene, Hannah. 

50 years and going strong, Windrose Clinic is the longest running classical Naturopathic facility in the United States!!

I, Dr. Letitia Dick, am incredibly proud and honored to carry on the Naturopathic medical model began by Lindlahr in the 1880’s.  As the medicine has grown, developed, and changed in so many ways, it has been unchanged in others.  The therapeutics of Lindlahr and Carroll still remain effective.  At a time when antibiotics are becoming ineffective against resistant bacteria, hydrotherapy is not.  At a time when Swine Flu epidemic is peaking, homeopathy and immune stimulating botanicals are effective.

I thrive on teaching this Classical Naturopathic model of healing to students at our medical universities.  My dear friend and colleague, Dr. Jared Zeff, and I began the Carroll Institute of Natural Healing, as a post-doctorate educational institution to keep the therapeutics and knowledge of these great physicians alive. 

The beauty and power of Naturopathy rises to the challenge of today’s public health.  At Windrose Clinic, Dr. Caryn Potenza and I continue to carry this torch.  And it is very bright.

GOING OUT ON A LIMB:

WORKING WITH NATURAL ESSENCES
IN NEW ZEALAND

My sister and her husband transplanted to New Zealand from the States some twenty years ago, when their children were ages 2 and 4.  My brother-in-law, who is a teacher, was fond of New Zealand’s philosophies and methods of education and, finding a personal freedom in their ways, led his family on the path to this foreign, beautiful land of many unexpected gifts.  Although having traveled to attune themselves to the Christian School outlook on life, they found themselves ultimately drawn and seeking knowledge of the indigenous ways of the First Nations peoples of New Zealand – their natural medicines, spiritual nature-based concepts, the survival methods of living in harmony with their surroundings.  Now, twenty years later, my sister is learning, through the teachings of First Light Flower Essences of New Zealand and their highly-respected natural healers, how to work in harmony with the essences of the indigenous flora of Papatuanuku – Earth Mother (in Maori), for the time period we are in.  She asked me if I would be her “guinea pig,” to which I said “yes” without hesitation.  What an opportunity!  How exciting to be able to share a potentially awesome transformative healing experience for me, with my sister while she learns, across the thousands of oceanic miles, affording me a chance to share these personal experiences at Song of Health!

The medicine of sacred plant healing recognizes that every living thing has its own “song,” including us.  By properly utilizing their medicines, we can help our own personal song, or vibration, to be healed when it goes out of whack, thus making us sick.  This is what our traditional Naturopathic healers ascribe to as they help us to restore the body’s natural balance and order. Types of medicines address different levels of healing.  For example, dried herbs, teas etc. affect physical aspects of the body; plant tinctures affect the physical and etheric bodies, Bach’s Flower remedies aid in restoring harmony to our being on the physical, mental, emotional and spiritual levels. “First Light’s” approach focuses on combinations of essences that directly speak to the vibrations of the 21st century, addressing the complex human makeup of physical, mental, emotional, etheric and spiritual parts.  

To give a little background about the instructors and makers of these New Zealand essences:

First Light Flower Essences of New Zealand is the creation of Franchelle Ofsoské-Wyber and her husband Anthony Wyber.  Franchelle, a New Zealander of Native American Cherokee descent, is known for her ability “to link into the healing ‘song’ of a plant.”  She is also trained in Bach flower remedies and herbal medicine.  Since 1985 she has been making and working extensively with her own New Zealand native flower essences, developing them from ancient species of native ferns and trees from the ancient forests of New Zealand, in accordance with indigenous ancient sacred protocols and processes necessary to make ‘sacred plant medicine’.  Franchelle devotes her gifts to assisting others and continuing to work with indigenous “wisdom keepers throughout the world for the principle of universal healing.”*

My sister explains the difference between the essences created by First Light Flower Essences of New Zealand and essences used in prior years this way: “Bach’s Flowers were originally made with a single vibrational note for their time. Anything produced after the year 2000 must be made with a vibrational chord to be fully effective.” 

Dr. Rangimarie Turuki Arikirangi Rose Pere, C.B.E., C.M., of New Zealand, renowned as traditional spiritual healer and teacher of the Kura Huna, the traditional mystery school of the Maori, and elder of several major tribes and honored as a Guardian of Earth Mother, shares:

 “We must awaken to our oneness with Papatuanuku, our earth mother and cherish her, as she does all of us."…  Healers help…“people to heal themselves, to remember their own power and wisdom from the Source of Life and how to link into the oneness of everything that exists."*

Dr. Pere is also the Official Spiritual Guardian and Protector in Perpetuity for First Light Flower Essences of New Zealand.

Flower essences are created when “flowers or plants release their essential energies or vibrational blueprint into water.  This flower essence is then naturally potentized to amplify its efficacy.”  Flower essences work gently to restore balance and harmony in the being.*

The medicinal essences used are grouped according to flower, fern, tree and seed.  The following descriptions are merely the basics of each group – The powers of the remedies are far more extensive:

1)  The group of Flower essences correspond with a person’s date of birth, which addresses personality type and aids in establishing harmony between the inner and outer being – or soul and personality, by helping to transform negative attitudes into positive states of mind.

2)  The Fern essences support the healing and maintenance of the person's aura, which is the energetic blueprint. They focus on gently helping to release sorrow and deep-seated pain, helping the person to better deal with life’s everyday traumas. 

3)  The Tree essences aid in restoring chakra integrity, helping one to stand balanced, protected, and personally empowered. 

4)  The Seed essences aid in restoring primary patterns for living in peace and harmony.  They are used to help make fresh starts, move through blocks, and enhance performance in any area of the person’s life.

Commencing my own personal experiment with these New Zealand essences, my sister first asked me questions about what aspects of my life I want to focus on for healing.  Where do I need to physically restore well being in my body?  What fears am I avoiding and needing to face, causing me blocks to successes in one or another aspects of my life? 

Where do we physically hurt?  What relationships need healing?  All of us have “issues,” at one time or another throughout our lives - something holding us back from being stress-free, successful, free from money worries, in peaceful harmony with our surroundings.  In order to become free from negativity, we must first be willing to admit our fears and get honest with ourselves, then share shortcomings in our lives with someone who can help us. 

So now, after discussing the issues I want to presently focus on most, my sister is going to study what essences can work with me to help restore balance.  That’s the plan!  This process takes time, often several months.  I’m looking forward to this with a positive attitude; healing can be fun!  I am also quite aware of how powerful natural essences are, that it is not something to be taken frivolously, and not to be taken without qualified supervision, just as any medicine is treated with seriousness.

I want to emphasize that, although I realize there are some people who are spiritually evolved enough to rise above their physical genetics of food intolerances and eat whatever they please without reaction, the truth is that the majority of us must be realistic about our genetic disparities.  Therefore, it is first and foremost imperative that we refrain from consuming our food intolerances – those foods that do not resonate in harmony with us, that we do not have the physical genetic capabilities of digesting, and their harm to us is equivalent to a poisonous drug.  First, we are good with balancing our diets with the foods beneficial for us, then we incorporate further natural modalities to aid and refine our well-being.

My purpose here is not to suggest that  you should run out and buy New Zealand essences.  It is to encourage everyone to expand the paradigms of what you are already familiar with.  You are a great group of people who already avail yourselves of looking at things differently.  You have already blazed your own trails by detracting from the medical majority, and believing in and following the natural ways of healing, as Nature intended. 

There are so many opportunities and gifts that Nature affords us with her flora throughout the world.  Find what works for you, which can often be accomplished with your Naturopath. 

Natural healing methods work and will not be overcome by bacteria or viruses, as do antibiotics and vaccines, which are based on war against the microscopic enemy.  It is because the ancient process of working with plants is based on working in harmony.

1–EGG OMELET

Julia Child was the master of the omelet.  For fun, I suggest watching old clips of her tossing the omelet over in the pan, to get the real feel of omelet making.  She will also demonstrate that it doesn’t have to look and be perfect to be delicious!  For the texture of a true omelet, it is best to make a one-egg omelet at a time instead of using more eggs in an attempt to cook it at once for multiple persons. Making it this way goes quickly and will still get everyone fed at the same table.

Crack egg in bowl and beat well with a fork.
Add milk and salt; mix well.
Using omelet pan or small heavy skillet with smooth bottom and edges, melt butter over medium high heat, being careful not to turn brown, then clarify by skimming fat solids off the top. 
Increase heat to high, then return skillet with clarified butter to burner.  Add egg mixture all at once.
Let egg sit for a few seconds.  If adding a filling, do so now on top, then begin flipping omelet to fall over itself, causing uncooked egg to pour to bottom of skillet, continuing to cook and flip.  You made need to use a spatula to turn the cooking omelet until you eventually master the “flip of the wrist.”  Turn omelet over edge of skillet directly onto serving plate.

BUTTERFLY PRAWNS WITH GARLIC, CILANTRO AND LIME

Preheat oven to 425 degrees.
If using fresh-picked blueberries, wash and discard any stems and leaves. Drain well in a colander.  If using frozen berries, thaw before using.
To the berries add honey and mix well.
Add flour and salt; mix well.
Using recipe for Plain Pastry Pie Crust, roll out half of the dough and line pie plate.  Pour the berry mixture in.
If using juice, sprinkle over top of berries.
Crumble butter and place around top of berries.
Roll out remaining dough and place over top.  Pinch edges together with fingers or crimp by pressing fork tines down around edge to seal. Prick the top of pie with a fork.  (You can be creative with this!)
Bake for 45 minutes. Cool on rack.


OPEN BLUEBERRY PIE

1 quart fresh or frozen blueberries

1 cup honey

1/8 tsp. salt
  1 cup water
D 1 Tbsp. butter, softened

Preheat oven to 450 degrees.
Prepare pie crust using one of the recipes in this section.  Line a pie dish, bringing the sides up higher than for a 2-crust pie.  Flute the edges by pinching between fingertips.  Bake 10-12 minutes, until golden brown.  Remove and cool.
Filling:
If using fresh blueberries, wash and discard any stems or leaves.  Drain well.  If using frozen berries, thaw before using.
In a 2 quart saucepan mix well the honey, cornstarch and salt.  Turn on heat to medium low and slowly add water, constantly stirring.  Continue to cook and stir until mixture has thickened and is clear, not cloudy.  Stir in berries, then the butter.  Continue to cook and stir until butter has melted and everything is mixed well.  Cool.
Just before serving, pour filling into baked pie crust.
Serving suggestion:  Serve with fresh whipped cream (D) (see recipe) over top.
